生物動力法➕7種葡萄混釀➕舊年份可遇不可求
繼Dominio de Pingus下一個西班牙頂級膜拜酒莊,要介紹QS 我們就不得不交代一下始創人Peter和Pingus的故事。1995年Peter 從Ribera del Duero 斗羅河岸裡找到了三塊樹齡超過60年的老藤葡萄園,購買了他們的葡萄(當時並沒有購買葡萄田),然後釀成了15桶(約4500瓶)的Pingus(這個名字是Peter 小時候的乳名)。然後在朋友的引薦下,Rober Parker品嘗到了這款酒,並即評價:“這是我喝過最好的紅酒之一” 罕見的第一個年份就已經打了98分的超高分數,結果Pingus一炮而紅🔥,再加上1997年載著900瓶1995年Pingus的貨櫃輪MV Elise號遇到大浪沉沒,如有神助般使原本僅有約4500瓶Pingus的庫存瞬間減少了五分之一的數量,無疑令酒價火上加油,頓即成為當時西班牙最貴的葡萄酒。現在Pingus的價格已不是一般老伯姓能夠負擔,而且一瓶難求,故我地應該將目光👀放在價格親民的QS。斗羅河岸位於西班牙北部,亦被稱為西班牙最具名氣及最具潛力的產區,無人不識的Vega Sicilia 亦坐落於此。1998年Peter Sisseck 與徒弟法國釀酒師Jérôme Bougnaud在斗羅河中下游的Sardon del Duero找到一塊風水寶地,擁有750-850公尺的高海拔,僅20公頃的田地裡,擁有13種不同的土質,讓酒莊得以選擇不同的風土種植各個葡萄品種,目前種植有7個不同品種,Peter 志在釀造「完全顛覆斗羅河風格的頂級混釀葡萄酒」。酒莊從開始就決定了要以全生物動力法的方式進行葡萄培育以及葡萄酒釀造,2007年份只使用天然的酵母,並分別於50%的新法國橡木桶與50%的舊法國橡木桶陳年16個月,僅以蛋白澄清後直接裝瓶,讓這款酒有著如此與眾不同的豐富細節,令人驚豔的斗羅酒。
👅✍🏻實試紀錄Tasting Note: 開瓶一股明顯的Wasabi 味😆,倒入杯之後,強烈的紫羅蘭花香,有黑醋栗、車厘子、西梅、孜然、八角等香料撲面而來,中間夾雜著少許酒精的辛辣感覺,一看15% 剛入口就能感受到酒體的豐滿圓潤,然而酸度稍明顯,帶著些許木桶的氣息,令人覺得這並不像一款07年的老酒~醒酒之後,杏脯、青椒、桂皮、月桂葉、黑朱古力、可可和雪茄盒的味道釋放出來,入口濃郁甜美,帶有明顯黑莓果醬的感覺,酸度和酒精的刺激感都減退了,整個酒變得融合,單寧緊實卻非常細膩,咽下明顯的咖啡味道,絲滑的單寧覆蓋整個口腔,Aftertaste 亦好長,令小編印象深刻的是那份活潑的酸度,對這麼大酒架不可或缺的原素。

The 2007 Quinta Sardonia is made up of 51% Tinto Fino (Tempranillo), 29% Cabernet Sauvignon with the balance Merlot, Syrah, Petit Verdot, Cabernet Franc, and Malbec aged for 18 months in French oak. Purple-colored, it delivers an already complex perfume of Asian spices, violets, incense, espresso, black cherry, and blackberry. upple-textured, sweetly-fruited, impeccably balanced, and structured enough to evolve for another 3-4 years, it will offer a drinking window extending from 2013 to 2027. It is already being proclaimed as Spain’s next cult wine.

(51% tinto fino and 29% cabernet sauvignon, augmented by merlot, syrah, petit verdot, cabernet franc and malbec) Deep ruby. Redcurrant, tobacco and dried dried rose aromas; really showing the cabernet right now. Spicy and precise, with sweet red berry and cherry flavors and a deeper note of blackberry that comes up with air. Very floral on the finish, which shows very good clarity and intensity. Note that the price for this wine has rolled back from $60 for earlier vintages. According to owner Peter Sisseck, the soil here is mostly limestone, and the vineyards (which were only planted in 1999 and 2000) are sited at between 750 and 830 meters. This wine has been improving steadily as the vines mature.
