🔍原本從事瓷器生意的Dominique Decoster和 Florence Decoster, 本著一腔對葡萄酒的熱愛，跨界玩物將舊公司所有業務出售之後於2001年收購了Chateau Fleur Cardinale。為了追求更高酒質, Decoster夫婦斥資巨額整修莊園更新釀酒設備,令酒莊質量大為提升⬆️ 短短幾年之內於2006年提升到St. Emilion Grand Cru Classe級別, 其後更大放異彩✨

酒莊位於聖愛美濃東面的山坡上, 爲該產區的最高點, 與貴為Grand Cru Classe B 的Chateau Valandraud 為鄰😍,擁有絕佳的風土👍土壤豐富👍包括黏土和石灰岩等7種土壤類型的組合, 根據不同品種及風土特性做出精細的調整, 釀造出的葡萄酒風味更為複雜和細膩。

另外, 酒莊一直施行有機種植♻️, 並於2013年獲得認證。酒莊採用傳統的「除葉」和 「剪枝」的方式, 使葡萄可以在不用加上化機肥 (僅使用有機肥料) 就能夠得到充足養分☀️而他們對葡萄質量要求也極為苛刻➡️不惜人力成本多次揀選葡萄➡️人工採收➡️在去梗前和後再次人工挑選➡️旨在選出最好的葡萄!💯🤗 ➡️然後在發酵池內進行低溫浸泡5~6天➡️隨後再發酵2~3週, 運用「重力自流法」以獲取風味更佳, 更純淨的佳釀。

正所謂魔鬼在細節👻 酒莊待釀酒過程的每一項細節如至寶🔮 只因他們對酒質有所要求🙌  酒莊內配備了25個可溫控的小型不鏽鋼桶來細分不同採收時間和園區的風格, 所有前期一絲不苟的對待葡萄釀出極俱生命力的酒液, 再放進100%全新的橡木桶內陳年12~16個月⚱️ 一般情況下，只有對釀酒葡萄的品質足夠自信，酒莊才會加大新桶的使用比例。無疑, 在一眾酒評家的高度評分下足以証明瞭其酒質😉👍

📝黑櫻桃，黑莓，摩卡和甘草的的香氣，香甜大方，風味極佳，層次豐富，帶有礦物質味，增加了複雜性，單寧綿長耐嚼，令人印象深刻。是一款具有獨特個性、兼具力量與優雅感的葡萄酒。

This beautiful wine from Fleur Cardinale performed great in its youth, both from barrel as well as post-bottling. A gorgeous blend of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon made by the Decoster family, the 2005 provides more evidence that this property is fully exploiting its tremendous potential. A few years away from reaching its plateau of maturity, its stunning nose of black cherry liqueur, cassis, licorice, earth and spice is followed by a full-bodied, concentrated and pure wine. Drink it over the next 15 or more years.

Wine Spectator 93

Beautiful aromas of black licorice, berry and vanilla follow through to a full body, with soft, velvety tannins and a long, caressing finish. Polished and very pretty. Incredibly well done for this estate. Best after 2016. 5,700 cases made.

Vinous 92+

Good deep red-ruby. Superripe, slightly high-toned aromas of black cherry, blackberry, mocha and licorice, with a hint of minerality adding complexity. Sweet and generous but with excellent flavor definition and plenty of underlying structure; in fact, this very juicy, fresh, mineral-driven wine shows a restrained sweetness and seems to be shutting down in the bottle. Builds impressively on the back end, with the chewy tannins coating the teeth. This should be superb in seven or eight years.  -- Stephen Tanzer
