歷史/ 背景
Les Michelons 是位於 Beaujolais 的 Moulin a Vent Cru，是山頂上最好的產區之一，面向東，享受早上和暖的太陽，其土壤縫隙中含有錳礦物質，賦予獨特風味。而此區更被譽為薄若萊酒王之稱，其酒質最男性化，單寧最高和最有陳存能力，帶有深色/ 紫色花香和果香，酒體醇厚，複雜，香料和成熟水果的氣息。莊主 Fabien 於 Les Michelons 佔地1.9公頃，樹齡50到90年，收成產量極低 25.7HL/HA (對比波爾多特級園正莊一般是 45HL/ HA，Sauternes 甜酒是15HL/ HA)，每年只產3400瓶左右，極之低產量，用整串葡萄低溫長時間浸泡在混凝土缸以萃取足夠的單寧及酒色，亦因為是整串葡萄連梗浸泡，所以連梗的成熟度都十分注重。然後放到布根地桶 (20% 新桶) 陳熟12個月，再放在 12個 400L 大桶。有些甚至陳上合共36個月，利用木桶柔化單寧。
莊主 Fabien Duperray
莊主 Fabien Duperray 以往在 Burgundy 打滾了二十多年，都是在分銷頂級 Burgundy 酒，像是 Domaine de la Romanee-Conti（DRC，羅曼尼康帝）、Domaine Coche-Dury（科奇酒莊）, 2006年時，43歲時買下第一塊田，自己開始造酒。Fabien 自言如此低產量，確實不為賺錢，只是為興趣。雖說是興趣當然不是玩玩而已，儘管暫時只獲有機認證，但田園實則用的是生物耕種。全人手採收。釀造時不加任何SO2，Fabien 說”只要發酵開始了，根本不用 SO2”。唯一在入樽後加了極少量，確保酒穩定性，使酒可保留香氣，陳存長時間。Fabien 相信自己的酒能陳上25年也不成問題。而好酒是需要時間等待，所以 Fabien 對酒塞的要求亦非常高，他用上每個2歐元的木塞(一般2級的木塞是0.4歐元一個，1級的是0.75歐元一個)，再每支人手臘封，務求做到有最好的微空氣對換環境，讓酒慢慢陳化。這款2011年，已有9歲，正值頂峰狀態，可即買即飲。另外，自2014年後，Fabien 減少了全梗釀造至30%，減少單寧萃取，令酒在年輕時也適合享用。所以要飲到傳統的 Burgundy 全梗釀法，就要選較舊年份了。
Fabien 在 Beaujolais 的葡萄園共約7公頃，分佈在 Fleurie 和 Moulin-à-Vent 兩村附近的山坡上，共釀7款酒﹕Fleurie “La Chapelle des Bois”, Fleurie “Les Moriers”, Moulin à Vent, Moulin à Vent « Les Michelons » , Moulin à Vent «Chassignol » , Morgon vieilles vignes, Chènas « Le Jugement dernier »。除此之外，，他還有10公頃與其他酒莊共用的位於勃艮第馬孔內（Maconnais）產區的葡萄園，種植白葡萄品種。

The 2011 Fabien Duperray Moulin-a-Vent Les Michelons Vieilles Vignes comes from Fabien's 1.9 hectares on granitic sand, from 50- and90-year-old vines. It was cropped 25.7 hectoliters per hectare. It has a super-concentrated bouquet of macerated dark cherries and maraschino, hints of marmalade, creme de cassis, and a sprinkle of cloves. The palate is medium-bodied with very ripe, demonstrative tannins. This is a more structured Moulin-a-Vent compared to the regular bottling, certainly with impressivegrip,yet maintaining freshness and composure all the way to its end. Drink 2019-2028+.
