💁🏻♀️ Astoria 呢間酒莊相信各酒友都唔陌生,由Sparkling 到 Processo,以至紅酒如Cabernet Sauvignon 或 Amarone大家都好熟識🤗尤其大哥酒款Amarone,每次一出都必定熱賣,當然因為Astoria出品有質素之餘價錢唔貴,一個字講晒: “平靚正” 🤪大家記得有大哥款Amarone之下,都唔好唔記得仲有小弟款Ripasso,同樣價廉物美🥳我地嘅皇牌之一小肥亦係Astoria嘅佳作😋而呢枝Ripasso可以話係小肥嘅升級版🤩🔝同樣都係用風乾葡萄釀造,但Ripasso就嚟自用風乾葡萄釀酒傳統產區Amarone👵🏻

要講Ripasso就首先要輕輕講下Amarone💁🏻♂️傳統Amarone會提早少少採收葡萄,去保持良好酸度去平衡酒體,然後將健康成熟嘅葡萄放喺稻草上自然風乾,當然今時今日大部份都已轉用塑膠網甚至用架去代替。葡萄串都唔可以太過緊密,確保通風好去蒸發水份同保持葡萄健康🍇
風乾三至四個月後葡萄會因為水份蒸份失去原來重量約30~40%,咁糖分自然更高,單寧同風味物質都會更複雜濃縮,釀出嚟嘅酒自然顏色更深,更濃更香更複雜😤🍷
當然精選葡萄同風乾嘅額外人力時間都代表Amarone嘅酒價唔會太平💸
而Ripasso 有Re-pass同go over again嘅意思,姐係會用老大Amarone或者Recioto壓榨後淨低嘅酒渣進行第二次發酵,令本身基底嘅Valpolicella紅酒增添乾果同糖漬果嘅風乾風味😤入口更濃縮🤤顏色酒精單寧酸度都推得更高,令成枝酒更有架構👍🏻
雖然用酒渣但質素絕對唔渣💪🏻產區Valpolicella Ripasso亦喺2010年升格為法定產區DOC,可見其品質同重要程度😉價錢上亦對比起大哥Amarone更親民,相信大家一試就知道Ripasso嘅價值所在😉
Astoria Ripasso 都用番3隻Amarone 主要葡萄Molinara、Corvina同埋Rondinella, 有良好嘅酸度去平衡厚重嘅酒體同果香,而呢隻會做番乾身啲去特顯佢更好嘅架構👍再喺木桶陳熟2年,圓潤又順滑😋
📝 實試報告:
酒色是紅寶石色,由於葡萄皮的關係,Ripasso 相對較黑果型,帶有成熟布冧、黑車厘子🍒、石榴、皮革及香料香氣。入口帶可可、藍莓、還有胡椒等。口感清爽,酒體飽滿厚實,單寧優雅,餘韻悠長👍用來跟中等濃度的菜餚如廣東菜🍽️,大排檔風味的小炒🥢相當配搭。
It has an intense ruby red color, with garnet reflections. The nose turns out to be broad and intense, with elegant aromas of ripe cherry and spices. The taste is dry and harmonious, with a good structure. Perfect in the company of aged cheeses, it offers the best of itself in combination with risotto or a platter of cold cuts.
