🔍在新世界葡萄酒的國度，雖然欠缺了歐美釀酒大國的悠長歷史背景，換來的卻是遍地開花，孕育釀酒人新思維、發掘眾多新產區、復興被遺忘的原生葡萄、試驗新的葡萄品種，甚至出現許多釀酒者的新組合，擦出不同的火花，而阿根廷的Bodega Cuarto Dominio 正正就是一個很好的例子，酒莊歷史不長，數埋都唔夠十年，由兩個年輕的搭擋 Andres Blanchard 和 Javier Catena 共同建立的新酒莊，兩者踫巧都是來自家族的第四代人 ，Javier Catena單睇姓氏就知道他是來自阿根廷第一釀酒家族Catena的後人, 這家族在阿根延無人不知，他的爸爸Jorge Catena正是Nicolas Catena的兄弟，而Nicolas更是取得Decanter2009年度風雲人物，第一個將歐州的釀酒技術應用於阿根廷並使其發光發熱，震驚全球，曾於01年的矇瓶試飲當中，擊敗了法國Latour、Haut Brion 及加州的頂級酒奪冠，將阿根廷酒帶到世界頂尖的精品酒舞台之上，是阿根廷最重要的葡萄酒先驅者。而另一邊廂Andres Blanchard 的家族也是西班牙移民，曾祖父就在阿根廷最老的酒莊Bodega Arizu工作，到祖父一代已經在Mendoza 打理屬於自己的36公頃葡萄園，直到Andres 自己已是第4代人，與Javier共同開創自己的釀酒事業，二人在大學時代是是 Rugby的好隊友，後來Anders更加入了Bodega Catena Zapata參與營銷的工作，有了阿根廷第一釀酒家族的資源和強大後盾，得到位於Cantena 家族位於La Consulta 絕佳的葡萄園，二人便繼續並肩作戰建立了Cuarto Dominio酒莊。既然是新酒莊，當然肩負了 「新」的擔子，在去年 Wine Ethusiast 雜誌做了一個專題名叫 Argentine Wine Redefined，追訪了幾位備受注目的新星， Cuarto Dominio 就是其中一員，以下就是Andres 對「新」的演譯:

Javier Catena🧑🏽的釀酒理念:
My family has grown vines in the foothills of the Andes Mountains in Mendoza for over four generations. We believe that in order to truly express our terroirs in a wine, we must first get to know our vineyards and to understand our soils. My father and I believe there is no recipe for it but we have been taught that there are at least three ingredients: passion, patience and time (generations).
這亦是我們Wine Couple 睇中 Cuarto Dominio的原因，新一代的浪潮更是將阿根廷的Malbec不往單一、粗糙、甜膩的平價路線去走，反之進而強調層次豐富、優雅和細緻的精品酒風格，就如跟隨叔父Nicolas Catena的大膽創新，為了追求精品酒的要求，釀出優雅平衡的風格，是第一位以高海拔的葡萄園來解決溫度過高的問題，這些思路正是前人努力開拓出來，留下交給新一代釀酒人接棒，由他們繼往開來為新世界葡萄酒展開新的一頁。此款Cuarto Dominio Malbec 是酒莊最高級別的精品酒，年產只有三千多瓶，葡萄來自San Carlos的兩個細小的葡萄地段，位於海拔900米之上（已相等於香港最高的大帽山的高度）溫度不能過高，才能種出新鮮有活力和酸度的葡萄，配上冷凍浸皮方法，幫助提取酒的顏色和保持原始香氣，又不會過度提取單寜，使酒體更加平衡，而經過15日的低溫發酵，再放進全新法國橡木桶陳熟24個月，兩個葡萄園地段展現出不同的風土，A田提供了成熟的布冧、朱古力等味道、柔順的口感、優良的結構和長度。B田提供了黑苺、礦物、黑胡椒、帶強烈的花香，兩地段不同特性經混調釀做出富有層次感的好酒👍🏻

📝The 2012 Cuarto Dominio Malbec originated from La Consulta in the Uco Valley. It's a ripe and well-oaked example with balsamic and spicy aromas and plenty of influence from the élevage (18 months in brand new French oak barrels). In reality the wine has 5% each Petit Verdot and Cabernet Franc, but as it's more than 85% Malbec, it's labeled as such. It feels a little formulaic (expensive, so it has to be oaky and come in a heavy bottle), in a end of the 1990s style. For fans of ripe, oaky reds. It seems to have good stuffing to develop in bottle and absorb the oak, at least to a certain extent. 3,600 bottles produced.
