📝 實試記錄：明顯是Cool Climate清涼酒區風格，番石榴(青皮白肉果種)、花香、少少青椒、Grassy新鮮蔬菜、檸檬、柑橘和未熟的黃色水果，火石，有Texture 同 Body，而沿海氣息增添了海鹽礦物感，令人舒服的酸度，Finish有飲完茉莉花茶的芳香。整體夠平衡，一般sauvignon blanc 酒體普遍較輕薄，而呢支口感和酒體會豐富些，除了跟魚蝦蟹貝殼海鮮類完美配搭，相信配上牛油烤雞，芝士意粉之類亦係唔錯的選擇👍🏻

Leyda Valley產區以前是以種植小麥和大麥為主，但由於上世紀九十年代末缺乏水資源，當局節約灌溉用水，農民紛紛改種只需要極少水份就能生長的葡萄，而葡萄正正就是喜愛惡劣環下生長的植物，愈艱辛葡萄的根愈是往下伸延，直至找到地下水源，根部穿越各土讓層能夠吸收不同土壤(粘土，壤土和花崗岩)中的礦物質及養份，因此由這些葡萄釀造出來的葡萄酒往往能夠獲得複雜度較高的結構，而葡萄顆粒小、果漿集中，更是釀造好酒的必備原材料，難怪Wine Folly 將Leyda Valley界定為釀造「Fine 」Sauvignon Blanc 的產區。

來自Leyda Valley的葡萄園離海不到10公里，這種涼爽的溫度（海風）和溫暖的陽光造成了一定的晝夜溫差，從而延長了葡萄的成熟時間，使得葡萄在保持自身複雜性的同時仍然不失酸度，記得好多前輩導師指出有平衡的酸度是優質的葡萄酒必要的條件，而台灣葡萄酒作家林裕森也曾講過如波爾多較弱年份2011/ 2013年，酒體相對薄而酸度高一點，也有更適合助餐的好處，而正正那份酸度在像智利炎熱的國度就更顯珍貴🤗，尤其是釀造高質量白酒之上。

Aresti buys its grapes for the Trisquel Sauvignon in Leyda, in the San Antonio Valley, just 8 kilometers from the sea. There’s no oak here, just fermentation in stainless steel, and then to the bottle. The result is a white wine full of herbal notes, fresh flavors, and acidity that brings it all together, refreshing everything in its path.

對於日後新世界南美酒的發展，Cool Climate 一詞只會愈來愈重要，既然如此何不早點面對😆
