酒莊 Bodegas Arrayan 位於 Santa Cruz de Retamar 的 Toledo省，由兩夫婦 Jose Maria Entrecanales 和 Maria Marsans 於1999年創辦，酒莊委托了有 The Flying Vine Doctor 之稱的澳洲籍葡萄栽培家 Richard Smart 在酒莊進行了關於地形、土壤和天氣的研究，因應不同的風土條件、曝光、方向，再揀選了最適合種植葡萄品種的位置，酒莊其後種植了多種國際葡萄如 Syrah、Merlot 、Cabernet Sauvignon 與 Petit Verdot 等等...

酒莊推出的第一個年份是2003 年，而在2009 年聘用了年輕的女釀酒師 Maite Sanchez 成為了酒莊的轉捩點，她主張她釀酒主要將葡萄酒呈現出當地的風土，接手第一樣是停用除草和殺蟲劑，採用環境保護概念打理葡萄園，更倡議酒莊重點應放在原生葡萄，在不同地區找出極佳的地塊，如老樹 Aibillo Mayor sandy soil ( Almorox) 和 Gredos 的 Garnacha ，採用天然酵母，棄用添加物，酒莊在2016 年取得 Organic 相關認証。在當地天氣的特徵是 Continental – Mediterranean 大陸性地中海氣候，除了季節之間差異大，如寒冷的冬天和超高溫的夏天，兩者可相差達40度以上，而且早晚日夜溫差也很大，土壤雖貧瘠，但保留水份極佳，高達700-900米的葡萄園也可有助降低溫度，幫助孕育出優秀的白酒和優雅富層次的紅酒。

原生葡萄 Albillo Real 阿比利洛來自位於Cebreros 70年的老樹葡萄園，土壤是由花崗岩剥蝕成的沙土，用原始的腳踏全枝葡萄，經兩天冷沉積後壓榨，被送到不锈缸發酵，當中採用原生酵母，發酵後放到700L的黏土缸 (Amphora ) 陳熟7個月，葡萄園土壤是花崗岩，為葡萄酒帶來豐富的礦物感。充滿果感，卻優雅平衡，帶茴香、蜜糖和柑橘，口感柔順卻富力量。

There is now also a 2018 Albillo Real Granito, a second white produced with Albillo Real grapes grown on granite soils. Produced with grapes from two plots of old vines in Cebreros, it fermented in stainless steel with indigenous yeasts and matured in clay tinaja(amphora), which is the tradition in the zone. It was kept in 700-liter tinajas for seven months. It's varietal, clean and floral and doesn't show any earthy aromas, which I sometimes find in amphorae whites. It has volume on the palate,showing the varietal character, and it's wide and juicy but very balanced. All of the whites have the sapidity, almost a saline sensation, that I believe comes from the granite soils
