Le Corton 是歷史性的莊園，也是 Corton 區的特級田，擁有得天獨厚的條件，也是整個區搶先接收陽光的位置，而且也有足夠的樹林保護葡萄園免受極端天氣影響。葡萄園主要種植紅葡萄酒，而 Chardonnay 則以 Corton-Charlemagne 標示，Bouchard 的 Le Corton 佔地 3.55公頃。以石灰石和黏土為主，坡向朝東，用上13kg小籃全人手採收，在法國橡木桶陳熟12-14個月，40%到50% 換新桶。此酒長期從 Allen Meadows 手上取得93分以上，要知道 AM評分一向嚴謹，可見此酒質量。 而配合了2010布根地的世紀年份，取得 AM 94 分!

Bouchard Pere &Fils於 1731年成立，係布根地數1數2的大哥。自1995年被Joseph Henriot 買下，亦是Henriot champagne ，William Fever 及Beaujolais的Fleurie村的Villa Ponciago的持有人。葡萄園的總數超過200 公頃。比起同樣知名的Louis Jadot (擁有150公頃的葡萄園)，Bouchard要多出50公頃，真不愧為布根地最重要的酒業集團。另外，Bouchard也是唯一開放接待觀光客預約參觀的伯恩精英酒商。早兩年睇完”BACK TO BURGUNDY | 濃情酒鄉”真係想去布根地走返轉。建議可以先係Google map 記低Bouchard Pere & Fils 位置，再開始安排行程。早年，紅酒原在伯恩城堡旁的Cuverie Colbert釀造，白酒在Meursault村另有釀酒窖。2005年，位於Savigny-les-Beaune村邊的Cuverie St. Vincent 新建完工後，把釀造、培養、裝瓶與儲存全部集中在一起。而唯一保留的是中世紀建造的大型防衛碉堡Bastion，石牆厚達7公尺，陰暗潮濕，溫度穩定，熟成環境絕佳，珍藏超過百萬瓶跨一百多個年份的頂級酒。參觀酒莊時絕不能錯過。

釀酒師

自2006年起，由 Philippe Prost 負責擔任技術總監和　Frederic Weber 釀酒師指揮26名釀酒師釀製所有　Bouchard 的葡萄酒。每年合共推出過百款酒，500多萬瓶，比起波爾多的酒莊每年只須釀出幾款酒複雜得多，真係少啲精力都唔掂。而當中包括年產數十萬瓶的Bourgogne，以及純手工釀製只有幾百瓶的特級園。當中多款Meursault村白更被認為具教科書意義的經典。同布根地好多名釀酒師一樣，團隊認為最重要的部份都喺葡萄園完成了，其餘的都只是再幫一把。所以就算量產的Bourgogne 酒，合約葡萄農也必須按要求培育葡萄。

A brooding but impressively complex nosefeatures notes of red currant, plum, earth and plenty of that Corton sauvagecharacter. The textured, intense and broad-shouldered flavors possess excellentmid-palate concentration with fully mature structural elements. There is amplebuffering sap, which is important as one would reasonably expect, this is a bigand sleekly muscled wine with an explosively long, linear and overtly austerefinish. The potential here is mostly impressive though note that plenty ofpatience is requisite.

Bouchard’s Côte de Beaune reds have a delicate beauty in 2010, this Corton capturing a fragrance of sunny fraises des bois, a savory essence of the soil and an herbal note that brings hibiscus to mind.
