點解話係未來酒款呢？有留意開Beaujolais/Burgundy嘅酒友都可能聽過好多嘅酒評甚至釀酒師自己都認同Beaujolais呢個產區同Gamey呢種葡萄嘅潛力好大，相信會係未來嘅主流！
呢個仲要唔係一般嘅Beaujolais, 見到上面一堆酒評大讚就知Paul-Henri Thillardon係當打嘅rising star！而而家閒閒地一枝村酒都貴Beaujolais cru一截，更加唔好話名莊，但呢個價位已經飲到頂級Beaujolais, 過去嘅酒價再唔試唔得啦～
Paul Henri喺葡萄酒學校畢業之後，即刻接手家族喺Chenas嘅葡萄園成立酒莊，由一開始已經奉行有機種植 + 生物動力法～甚至接近係自然酒！用原生酵母 + 低硫。
亦都重視生物多樣性，用兩匹馬幫手耕作，更犧牲部份葡萄園，用嚟養牛、家禽、豬等等。仲種埋樹，認為係缺一不可嘅完整系統～
一開始採用去梗、長時間發酵浸皮等比較傳統派嘅方法釀酒，到而家唔去梗(whole bunch) + 半二氧化碳浸皮法(semi-carbonic maceration)，係Paul-Henri Thillardon調整到認為最理想表達葡萄同風土嘅方式～自然派嘅佢當然都唔會加酸加糖，用天然酵母，唔澄清唔過濾，近年甚至盡可能都唔加任何二氧化硫！認為就算用少少都會令果感稍為弱咗！有一半酒款都係用500/600升大桶陳熟去保留果感～
而家有13公頃葡萄園，喺Moulin a Vent、Chiroubles等村都有酒款，2012起已經全部轉為有機 + 生物動力法～
而呢款Chassignol係酒莊嘅旗艦酒款，都係嚟自佢嘅主場Chenas, 以Gamay釀造，Chenas係Beaujolais 10個cru最細嘅一個，產量雖少但同隔離嘅Moulin-a-Vent一樣，出名高質，厚身而陳年能力勁，而且比其他cru有機會帶更多花香、泥土同單寧感～

The Thillardon brothers' 2018 Chénas Chassignol continues to show beautifully, offering up pretty aromas of red berries, candied peel, rose petals and spices that are more expressive than they were last year, just after bottling. On the palate, it's medium to full-bodied, deep and concerted, with a multidimensional core, understated concentration, melting tannins and a long, resonant finish. Delicate but intense, this exquisitely elegant Chénas is produced from organically farmed old vines.

The 2018 Chenas Chassignol comes from 3.5 hectares of century-old vines behind the winery and spent an additional year in bottle before it was released onto the market. Gorgeous brambly red berry fruit on the nose intermixes with blood orange and wilted rose petals. The well-balanced palate offers crisp acidity and orange-peel-infused red fruit. A touch of white pepper and clove lends another dimension toward the finish. Excellent.
