為何部分Port酒正面瓶身會有白油的印記?
大部分陳舊Port酒的正面瓶身都會有名為Splash Mark的白油印記。
此為酒莊在酒窖陳存酒瓶時的記號，以茲識別酒瓶陳放時正面朝上的方向並了解沉積物所累積的地方(即白油Splash Mark的反方)。
因此建議飲家在酒櫃存放Port酒時，同樣有酒標和白色Splash Mark的一面朝上方，並且在飲用前1-2天提前直立處置令沉積物提前沉至瓶底。
歷史/ 背景
於1820年在葡萄牙西北部之奧波多(Oporto)，興建俯視著斗羅河(Douro)的酒廠。Graham家族原籍蘇格蘭格拉斯高。在1890年，Graham收購了Quintados Malvedos，Graham是首批投資購買葡萄園的波特酒公司之一，這座朝南的莊園靠近Tua村，是斗羅境內位置最佳的園地之一，擁有非常特別的小區氣候，生產出口感強勁且豐富的酒，現已成為所有Graham波特酒最重要的產地代表，莊園的房子迄今仍屹立於山脊上，俯視山底下的斗羅河之綺麗風光，時至今日，因連續收購鄰近莊園而更加擴大，而前英國首相亦曾於1993和1994年在Malvedos避暑。
在1970年葛拉漢酒廠被Symington家族所收購，諷刺的是收購葛拉漢酒廠的辛明頓家族，亦是在1882年從蘇格蘭到達奧波多的。Graham的波特酒來自其Malvedos及位於Rio Torto Valley的葡萄園，這些葡萄園有些從上世紀初便已供應葡萄給Malvedos及來自Quinta da Vila Velha及Quinta de Vale de Malhadas。並且大部分來自這些莊園的波特酒都是用大石池以人腳踐踏來生產。1998年，Graham開始進行現代化：製造一種革命式的機械板桶設備容納四座機械釀酒桶，並嚐試釀造1999年採收的葡萄，毫無疑問辛明頓的最新發明將帶領斗羅河谷高地進入另一個新世紀。
Graham的年份波特酒每十年只有3年乎合最住生長條件釀造，在二千年代只有2000, 2003 及2007年有釀造。年份波特酒酒體濃郁、口感豐富並且結構優良的葡萄酒，常在盲品的試酒時被歸類為的最佳品牌及在拍賣場上常成為最高價的波特酒，Robert Parker著名酒評家說：「Graham是二次世界大戰後，最佳波特酒中酒質最穩定的品牌。」

Paul Symington 是Graham & Dow著名波特酒世家的第四代傳人，為家族酒莊辛勤耕耘了整整40年，於2018年底正式退休。在其掌管期間， Symington Family Estates被一眾權威雜誌評為“葡萄牙年度生產商”以及“歐洲年度酒莊”，還多次入選“世界最受歡迎波特酒品牌”榜單，而Paul也代表整個家族，成為第一位獲得“《Decanter》年度人物”稱號的葡萄牙人，並於2019年獲得由the drinks business與葡萄酒大師協會（Institute of Masters of Wine）共同頒發的終身成就獎（The Lifetime Achievement）。

Aromas of dried fruits, raisins and Christmas cake. Some chocolate undertones too, plus licorice and wet earth. Full body, medium sweet with gorgeous depth and intensity of fruit. So long and beautiful. What an amazing finish already. So sexy. Drink or hold. But this will go on for decades.

Plush, ripe and really packed, with a mix of warmed cassis, plum reduction and fig compote notes that just won't quit, all backed by hints of melted red licorice, warmed fruitcake and mulling spice notes. The long finish is fruit-coated but ripples with energy. This is really taking its time to come around fully as it remains one of the wines of the vintage.

Grapy, unformed, black raspberry liqueur and licorice-infused cassis notes leap from the glass of this opaque purple-colored wine. Sweet, plush, rich, and accessible, it is a forward, lush, concentrated effort that should drink well for two decades. While not one of Graham's most profound ports, it should evolve rapidly, providing immense crowd appeal.
