Allen Meadows thinks this superstar producer “has arguably become the finest pure négoce specializing in white Burgundy today“.

🔎位於 Meursault 村原莊名為Domaine Jean Boillot ，在2005年Jean Boillot將酒莊傳給第5代兒子 Henry Boillot 並將酒莊改名為 Domaine Henri Boillot ，而他的兒子 Guillaume 亦相繼加入酒莊幫父親主理紅酒，父子檔共同釀酒，葡萄園只有15公頃，酒莊同時兼營了外購葡萄的酒商角色，產量少，是少數的優質酒莊能做到紅白皆出色，尤其是令人驚豔的白酒出品，今次呢款入門版 Bourgogne Chardonnay 的葡萄來自 Meursault 、Puligny-Montrachet、Saint Romain 和Auxey-Duresses，採用綠色耕作，不用化學肥料，只有10%用全新橡木桶，其餘用上1-2年的木桶，酒評家們不論是Robert Parker、Stephen Tanzer 以及Burgundy葡萄酒權威Allen Meadows 對Henri Boillot的葡萄酒有很高的評價。

對Henri Boillot 來講他的重中之重就係白酒的「酸度」，這兩個字貫穿了他釀造的風格，他永遠比同區鄰居更早進行葡萄採收，務求令採收的葡萄不會出現過熟，並保持新鮮活力，釀酒選用不透鋼桶、中性的木桶、而且不會放過長的木桶陳熟時間，故呈現出清新、純淨、礦物、精密而強勁，這也是眾多酒迷愛上他家白酒的主要原因，另外2016年也是Burdungy 超卓的年份，而且收成量非常少🥺，近排天氣悶熱真係要搵支Henri Boillot 白酒來解暑，心動💗不如行動🏃🏻‍♂️🏃🏻‍♀️📲
