The estate’s Cote de Nuits-Villages is always a perfect ringer in a blind tasting with Burgundies of a higher pedigree. Domaine Jayer-Gilles is also well known for its Pinot Noirs from the Echezeaux Grand Cru vineyard. 他是酒神Henri Jayer的侄子，正宗的‘神二代’；Jayer家族最後一根香火，更是現今唯一繼承家族傳統從事釀酒的嫡系子孫；他釀制的Echezeaux被勃艮第酒評“教父”-Allen Meadows評定為最佳代表。他就是Gilles Jayer，勃艮第名符其實的大家。
勃艮第的金丘(Cote d’Or)對於愛酒之人來說絲毫不覺陌生。金丘實際上就是一條南北長約60公里的狹長地帶，蘊育著世界上最頂級的葡萄園，舉世聞名。翻過金丘山坡之後則是另外一片世界，這裏通常被稱作丘後(Arriere Cote)，對於酒迷甚至專業人士來說都是未知地帶。Magny-les-Villers便位於丘後，具體位置在Aloxe-Corton產區的北面，這裏平日安享靜怡，只有農耕期間拖拉機的響聲方可劃破空氣中的寂靜。事實上，這裏也是葡萄酒產區，但是絕大多數的葡萄酒都是賣給酒商。但是，名不經傳的Magny-les-Villers卻隱匿著一家大有來頭的酒莊，他便是Domaine Jayer-Gilles。
或許你從名字就可以看出端倪，酒莊與勃艮第已故酒神Henri Jayer必然頗有淵源。的確，Domaine Jayer-Gilles的創始人Robert Jayer出身名村Vosne-Romanee的釀酒世家，偉大的Henri Jayer是他的堂兄弟。因此，如今的莊主Gilles Jayer是Jayer家族唯一的香火。 Jayer原是勃艮第釀酒世家，隨著精神領袖Henri Jayer於2006年去世，家族日漸衰退，早已不復往日風采。最令人唏噓的是Jayer家族歷代陰盛陽衰，旗艦人物Henri Jayer膝下無子，幾個女兒也無心釀酒，所有的祖傳酒園都租借給Henri妻子的侄子Emmanuel Rouget；家族其他成員同樣都是女兒，愛飲酒但不愛農活，如此一來Jayer家族裏仍在釀酒的只有Gilles Jayer一人。
頂著Jayer家族“最後一根香火”的帽子、Jayer家族的釀酒基因，以及Henri Jayer的金字招牌，Gille Jayer與Domaine Jayer-Gilles酒莊一直頗受關注。儘管絕大部分的人都希望能與Henri Jayer本人或者Jayer家族扯上一點關係，Gilles Jayer卻對此嗤之以鼻。他甚至不願過多的討論他的父親Robert Jayer，即酒莊創始人。
1948年，Robert Jayer師從Domaine de la Romanee-Conti酒莊的酒窖總管Andre Noblet，並在這家至今仍然是勃艮第皇者的酒莊工作了7年時間。從釀酒的專業角度來說，這段經歷對酒莊日後的發展起著至關重要的作用。1955年，Robert Jayer離開DRC並與來自Magny-Les-Villers的Mlle Gilles結婚。Robert Jayer自己從家族繼承的位於Nuits Saint-Georges產區一級園Les Damodes和Echezeaux du Dessus特級園，加上Gilles位於Magny的嫁妝酒園，至今仍然是Domaine Jayer-Gilles酒莊的核心組成部分。
Robert Jayer於1997年退休，但是據傳父子兩關係很複雜，Robert退休之後也沒有將酒莊和葡萄園傳給Gilles Jayer，而是以租約佃農(Fermage)的方式交由Gilles打理，Gilles還需要交租給父親以耕種葡萄園及釀酒。此外，雖然他家的的確確是Jayer家族一份子，Henri Jayer的確是Gilles Jayer的叔父，但是之間的關係並不像大家設想的那麼親密，亦或者說Domaine Jayer-Gilles的酒質是否會有酒神的神韻。Gilles明確表示自己酒莊的釀酒與叔父Henri Jayer半毛錢關係都沒有。話雖如此，Domaine Jayer-Gilles與Henri Jayer同樣發酵前低溫浸漬、全部去梗、不過濾不澄清，酒質也十分注重純淨度。
Gilles家族在Magny-Les-Villers世代經營葡萄園，而Magny正是Hautes Cotes de Nuits和Hautes Cotes de Beaune交接的地方，因此Jayer-Gilles在兩個大區級產區都有地塊。Jayer-Gilles以其高萃取度和新桶使用比例而著稱，黑皮諾是100%去梗，冷浸漬時間5-6天。Jayer習慣每天1-2次踩皮(pigeages)，偶爾進行淋皮(remontage)，這兩種方式極大地提高了萃取度。陳釀為期18個月，不倒桶、不過濾、不澄清。
Jayer-Gilles的兩款大區紅Hautes Cotes de Beaune和Nuits口碑極好，幾乎年年都是勃艮第權威鑒賞家Allen Meadows的Burghound.com年度最佳性價比酒單的一員。尤其是Hautes Cotes de Nuits Rouge的BH分數平均甚至超過89，對於大區級別的勃艮第紅來說這簡直讓無數村級葡萄酒無地自容。絕對推薦嘗試！
Jayer-Gilles在Nuits Saint-Georges產區的兩個葡萄園內有地塊，分別是一級園Les Damodes和村級Les Hautes Poirets。後者顧名思義位於名園Les Poirets的上坡處，要比位於Vosne-Romanee產區附近的Les Damoes酒體更加強勁。
Domaine Jayer-Gilles毫無疑問是一家從大區到特級都值得嘗試的優秀釀酒者，最關鍵的是這家的酒定價極為合理，極具性價比。

From the site of an old quarry south of town, high above Poiret and Ronciere, Jayer’s 2005 Nuits-St.-Georges Les Hauts Poirets opens with scents of resin, vanilla and ultra-diverse ripe black fruits. In the mouth, it displays intense concentration of, on the one hand, caramelized black fruits and jam, and on the other, a positively lip-smacking, cheek-slapping fresh, tart and vigorous manifestation of fruit. Underlying roasted meat and chalk characteristics emerge in a finish of persistent vibrancy and intensely ripe, pure, clear fruit, framed but not fenced-in by the oak.

Bright ruby-red. Pure aromas of blackberry, violet and spicy oak. Suave on entry, then fine-grained and vivacious in the middle, with sound acidity and pronounced minerality. Finishes long and juicy, with notes of cherry and raspberry and a suggestion of celery. This strikes me as the kind of wine that will shut down in the bottle for at least a few years. Gilles Jayer notes that this fruit had the highest potential alcohol in 2005.

An earthy and slightly toasty nose features red pinot fruit and briar notes that complement the rich, full and rather animale flavors that possess good mid-palate density though this comes up fairly short on the finish. There is a lot of gas present which I suspect is the culprit for the abrupt finish as all of the other wines offer good to excellent persistence.
