由 Voillot 家族經歷了6代人的酒莊,佔地8公頃,葡萄園分佈在 Meursault , Volnay , Pommard 和 Beaune 等13個不同產區,追尋純真,醇造傳統的布根地酒,尊重風土,Jean-Pierre Charlot 由1980年代開始已跟岳父 Joseph Voillot 共事,到1995正式接管酒莊,他自己亦是 Beaune 的博訥葡萄酒高級中學 Lycee Viticole 擔任釀酒學系當教授,多位知名的布根地釀酒師都是他的弟子,而他的父親多年在 Bouchard Pere et Fils 工作,多年與葡萄農建立緊密的關系, Jean-Pierre Charlot 從小耳濡目染下很自然走上釀酒師之路,其後與 Joseph Voillot 的女兒結婚並接管了岳父的酒莊,上任後將葡萄園管理轉向可持續經營方向,盡量減低人為干預,調正了各級酒在橡木桶陳熟的時間,Preimer Cru 約6個月,Village 14個月,Bourgogne 14-16個月,減低新橡木桶比例至10-20%,亦嘗試不作過濾,最令人津津樂道是能夠發揮每處風土的特點,透過他的巧手,就算弱年也能保持水準,現在 Jean-Pierre 已退居幕後,由他的姪兒 Etienne Chaix 管理酒莊,酒莊已得到 High Environmental Value (HVE) 。
Premier Cru Champans 是 Volnay 其中一個知名的 Premier Cru,香邦園位於 Clos des Chenes 東面,地勢較低,土壤構成複雜,斜坡頂部土層較薄,含有大量石灰岩,而底部的土層較厚,顏色偏紅,出產的葡萄酒精緻、細膩、單寧柔順、風味集中,有著典型的 Volnay 風格,更被酒界認定此 Premier Cru 早已達到 Grand Cru 水平,只待升級。總面積11.2公頃, Domaine Joseph Voillot 擁有1.07公頃,Joseph Voillot 葡萄園土壤是很堅硬的石灰岩,地勢較低,土壤層較厚,故種出的葡萄有較強的水果氣息,更有力量,種植年份分別是 1930、1946 和 1973 年,樹齡平均50年以上。

Purity and harmony are the hallmarks ofthis cherry-, floral- and mineral-tinged red, which is deftly balanced andwell-integrated, with a lingering aftertaste of flowers and red fruits.

Here too there is a gentle note of oak setting off thesomber, even brooding nose of earthy dark berry fruit aromas that precede rich,intense and beautifully delineated flavors that possess good ripeness of thestructural elements and fine finishing balance. This is a lovely if seriouseffort built to reward mid-term cellaring. Definitely worth a look.

Typicallyfor its site, a 2006 Volnay Champans smells richly of sauteed mushrooms as wellas of meat stock and fresh red berries wreathed in wood smoke. This displaysquite evident but relatively fine-grained tannins and a sense of stuffingsurpassing that of the other Volnay crus in this year's Voillot collection. Thealternation of brightness with suggestions of meat and mushroom reduction isfascinating rather than at all jarring. Charlot thinks this needs 4-5 years toreally show its stuff, but I am inclined to believe it will remain rewarding torevisit and to employ at table anytime over the next half dozen.
