Patrick Baudouin 在工廠工作了十二年，並在巴黎賣過書，在 1990 年接過曾祖父母在 1920 年成立的家族酒莊，現在已經是百年酒莊。佔地 14 公頃，10 公頃為 Chenin Blanc，4 公頃為 Cabernet Franc + Cabernet Sauvignon。一開始的時候 Patrick 都是跟隨傳統大路做法，以加糖 chaptalization 去釀造甜酒，令生產更穩定，但很快他就破舊立新，做很多研究，務求保持天然，令葡萄發揮風土真正的潛力，最終在 1994 年後完全摒棄加糖。

還在 2002 年起轉行有機種植，全人手採收 + 篩選，使用天然酵母發酵，低硫，紅酒 100% 除梗... 所以他也希望 AOC 是一個在原產地和質素上都是可信標籤，而不是低要求到只求所有生產者種個葡萄加個糖都能進入。他致力推動 AOC 核心價值的回歸，所以也被 Wine Advocate 表揚，更稱他為 Chenin Blanc 教皇之一！

他的 Le sens du Chenin 1997 (酒名解 "Chenin Blanc 的意義"，有夠霸氣) 更入選傳奇法國收藏家 Michel Chasseuil 的 100 枝寶藏級酒款 100 Vintage Treasures！同場的是 DRC RC 1945(史上拍賣價最高的酒，約 4 百 3 十多萬港幣)、路易十三、Petrus 1945、Latour 1899、Lafite 1959、Henri Jayer Richebourg 1978 等等等等...而 DRC 莊主本人Aubert de Villaine 更曾大讚，特別邀請 Patrick 到布根地演講！更貼地的是連真正侍酒的米芝蓮三星餐廳也一致推薦，包括法國三星 Ledoyen、Pierre Gagnaire、Guy Savoy、Troisgros 等... 實力可說誇張！！

產區獨有的黑色片岩 Anjou noir (法文：le schistes de l'Anjou noir)

這款來自名區 Savennieres ，是款 dry (不甜)的 100% Chenin Blanc，葡萄園只有 1.5 公頃，充滿產區獨有的黑色片岩 Anjou noir (法文：le schistes de l'Anjou noir)，是來自北面 Armorican Massif 阿爾莫里坎高原的石炭紀岩石，也有東南向坡度幫助成熟。2016 起以馬匹幫助耕作，輕柔壓榨，天然酵母，在 Burgundy 布根地木桶和 600升法國桶 on lees 陳熟 12 個月 (25% 為新桶，50% 用過兩次，25% 用過三次)，經完整蘋果乳酸發酵 malolactic fermentation。裝瓶前 Racking 換桶到不鏽鋼桶陳熟數月以隔渣穩定。

The 2019 Bellevue offers tenderness and purity. It is a textural wine first and foremost, providing an initial caress before finishing firm and structured, the combination of acid and light bitterness provides tension. Citrus and nuts merge on the smoky finish.
