🔎選取酒莊葡萄田「Uitzicht」最優質的Syrah葡萄，先將35% 用腳壓榨整串葡萄，另外65% 除梗挑選，經過溫和的推壓和澆灌，自然發酵開始，葡萄酒再經一次壓榨並放在法國橡木桶裡作第二次發酵，然後陳熟20個月……………點解酒的風格如少女般溫柔? 答案就係Bio-dynamic ，生物動力法令土壤有更高的生物活動和較低的酸度，令葡萄樹的枝梗和葡萄更小，增加了葡萄皮與果肉的比例，葡萄的天然酸度增加，同時影響了酒的風格，因而顯得柔和婉約，這種風格正正代表葡萄園和附近的生態達至和諧平衡，而豐富的層次仿如葡萄園的生物多樣性，葡萄樹跟以其他植物、動物，所有生物息息相關，相互影響，回到最初的起步點，人類不駕馭自然，大自然就會回饋最好的事情！
