Egashima Brewery has steadfastly adhered to its motto of "honesty" since its founding in 1679. In 1919, it became the first distillery in Japan to obtain a whisky brewing license. A family-run conglomerate with over a century of history, Egashima Brewery is a pioneer in the Japanese sake industry. Its brewers continuously strive to develop the smoothest whisky, and Akashi whisky is a product of this unwavering commitment, honed over a century.
Egashima Brewery has long been a pioneer in the Japanese sake industry, holding a leading position for many years. Its history can be traced back to the founder's father, who began brewing sake over 300 years ago using locally sourced rice and pure, sweet well water, laying the foundation for the brewery.
In 1888, Urabe Heikichi, the second son who inherited his father's business acumen, founded the Ei-gajima Brewing Co., Ltd. with the grand ambition of expanding Ei-gajima's local brewing industry throughout Japan. He adopted the Chinese character for "honesty" (诚) as the company motto. This marked the beginning of Ei-gajima's golden age in the Japanese brewing industry.
Urabe Heikichi, leveraging favorable circumstances, enabled Ei-gajima to achieve numerous remarkable feats in the Japanese brewing industry: establishing renowned brands of sake and shochu such as *Nihon Tamashii*, *Yuri Masamune*, and *Kami-taka*, which are widely known in Japanese sake history; becoming the fourth largest brewing company in Japan in 1889, and being selected as one of the top 100 industrial companies in Japan the following year; and obtaining Japan's first whisky brewing license in 1919, establishing the first distillery to produce a unique style of white oak whisky.
To combat the counterfeiting of best-selling products across Japan, the brewery invented the 1-liter bottle in its own glass bottle factory. Today, the 1-liter bottle is the standard container in the Japanese sake industry. Subsequently, Heikichi Urabe rapidly developed the factory into a diversified brewing company. Ei-gajima Brewery's products are exported to overseas markets such as Hawaii, USA, with their own fleet of ships providing escort. Even today, Ei-gajima Brewery remains one of the few family-run breweries in Japan that produces various types of alcohol, including sake, shochu, whisky, wine, plum wine, and brandy.

Rice from the Harima Basin north of Akashi (known as Harima rice) has always been an important grain-producing region, and is the origin of the "King of Sake Rice" – Yamada Nishiki. Combined with the sweet well water from the Akashi Beach, this creates renowned sake, laying the foundation for Ei-gajima Brewery's great achievements.
Brewed with Precious Water
The water used in brewing sake arguably determines its quality. Eijishima Brewery is situated in a prime location ideal for sake brewing, utilizing groundwater from the granite of the Rokko Mountains and the shell layers along the coast—a renowned source of this water. When this water is used to brew sake, a unique flavor, known as "gakumi," develops during fermentation.

Akashi Toji Selected Sherry Cask Pure Malt Whisky, produced under the guidance of the "Toji," the master brewers at Eijishima Brewery, is crafted with the craftsman's spirit. Distilled from 100% malted barley and matured in expensive sherry casks, it is bottled at 46% ABV for optimal balance of aroma and flavor. It displays delicate floral and fruity aromas, a smooth palate with a robust body, perfectly embodying the craftsmanship of Japanese sake brewing.
