Chateau Yaldara was once the core industry of Australia's second largest listed company, Australian Wines Limited (AVL). It is famous for the high-quality Port wine it produces and is one of Australia's famous wineries. In 2014, Australia's 1847 Winery officially acquired Chateau Yaldara. This news caused a sensation in Australia. The powerful 1847 Winery was founded in 1847 by Johann Gramp Curnow, the great-grandfather of the original owner John Curnow, and is the leading winery in the region. The first commercial winery still in operation today, it currently has 7 self-owned wineries. The famous Chateau Yaldara is like a grafting rootstock that continuously nourishes 1847.

Chateau Yaldara originated in 1941. A young German named Hermann Thumm came to Australia with the dream of becoming an excellent winemaker, and ambitiously started his large-scale production of champagne in the Murray River wine region. Brewing trials. In his autobiography "The Road to Yaldara", he once wrote: "For so many years, I have been planning and hoping to occupy a place in the wine industry in South Australia. For this reason, I have been working hard for this from all aspects. Prepare for when the time comes.”
God always favors those who work hard. Four years later, when Mr. Hermann Thumm was 33 years old, a turning point that changed his life quietly occurred. When this trip to the Barossa Valley in South Australia passed by the North Para River, Hermann Thumm Mr. Hermann Thumm came across the utopia of his dreams by chance. After many setbacks, Mr. Hermann Thumm successfully bought it the next year. He began to build his Yaldara wine empire with his own hands, and a legendary wine career slowly unfolded, adding a strong chapter to the history of the Barossa Valley wine growing and brewing industry.

The history of this land in Yaldara can be traced back to 1854. A water-powered flour mill was first established here and was soon converted into a flax processing factory and later used as a wine processing factory. In the early years when he took over the vineyard, no one came here to purchase grapes. Seeing that the grape growers had worked hard for several years to cultivate grapes and were worried that there was no market, Mr. Hermann Thumm boldly decided to sell all the grapes to the grape growers. Acquisition, this move made everyone thumbs up. The following year, the grape harvest was reduced, and the wine stored in his cellar was sold well. Mr. Hermann Thumm ushered in his first harvest year. With a kind heart, helping others can also be said to be helping himself.
It is said that the love between Mr. Hermann Thumm and his wife is like the love between port wine and oak barrels. The romantic Mr. Hermann Thumm fell in love at first sight with the daughter of the local Hebart family. The young and capable young man relied on his infatuated love and focus on the wine industry. He was impressed by the beautiful Miss Hebart and named the winery "Yaldara", which means sparkling, to compare with the virtuous and intelligent Miss Hebart.

In 1954 Hermann purchased the remaining land which included the rest of the flax facility and then in 1960 bought the adjoining 79 acres of land which now makes up the majority of the estate.Work continued, building and digging out the lake, rebuilding storage sheds and the new sheds for Champagne bottling.
The delicate beads enhance the citrus and white peach notes with highlights of strawberry blossom and lemon zest.
Ageing on yeast lees for a minimum of 18 months had created complex dough and biscuit richness on the palate, beautifully balanced with a clean acid line that refreshes the senses.
