Winery

Domaine des Miles, located in the heart of the Chablis appellation, occupies 20 hectares, 18 of which are under production. The winery has been passed down from father to son for the fourth generation. Chablis, part of the Burgundy wine region, stretches along the hillsides upstream of the Serein River, a 20-kilometer-long and 15-kilometer-wide belt encompassing approximately 20 hamlets.

Region

The Fourchaume appellation is primarily located in La Chapelle-Vaupelteigne, on a southwest- or southeast-facing slope. Its soils are typically Kimmeridgian clay and limestone, containing tiny shell fossils. This unique soil imparts a strong minerality and refreshing acidity to the wines. Fourchaume is divided into several sub-regions: the southern region is warmer, ideal for ripening, while the northern region is cooler, resulting in higher acidity and aging potential.

Winemaking

The unique soil and climate contribute to the richness of Chablis wines. The vineyards are located between the villages of Milly and Fleys on a northwest slope with chalky clay soils. The vines are approximately 25 years old. Ripeness testing is performed on different plots to determine the optimal time to begin harvesting. With its freshness and rounded, mineral aromas, the grapes pair best with raw seafood.

Rating

Fourchaume Premier Cru wines typically exhibit classic Chablis flavors: aromas of citrus, lemon, green apple, sea salt, and a flinty minerality. They are medium-bodied, with lively acidity, a savory flavor, and a stony finish. Compared to other Chablis wines, it possesses more "muscle" and complexity.
