Domaine Gagnepain (full name Domaine de la Cote de Fasse) is a family-owned winery in the Chablis region of Burgundy, France, located near the village of Beine. It is renowned for producing pure, mineral-rich Chardonnay white wines. Founded in 1991 by Françoise Gagnepain and his children Laurent and Isabelle, the winery started with just a few hectares of vineyards and gradually expanded to approximately 14.5 hectares, primarily encompassing Petit Chablis and Chablis vineyards. In 2016, with the addition of the third generation, Paul Gagnepain, the winery further expanded, launching its first Chablis Premier Cru wine in 2017. The winery employs "viticulture raisonnée" (rational agriculture) methods, emphasizing soil cultivation, herb mulching, and precise pesticide application, all in respect for the environment and terroir.

The Chablis AOC, located at the northernmost tip of Burgundy, France, is renowned for its exceptionally cool climate and ancient maritime soils.
The winery's vineyards are primarily situated in climats such as Côte de Fasse, Adroit de Talvat, and Vau Poilet sur Troene, with typical Kimmeridgian clay limestone soils composed of ancient marine life and oyster fossils deposited during the Jurassic period. It is this unique fossilized limestone that imparts to this white wine classic flint, wet stone, and subtle saline minerality.


The winery emphasizes natural fermentation and uses stainless steel tanks for aging to avoid the influence of oak barrels, thus preserving the purity and vibrancy of Chablis. Production is strictly controlled, with a focus on balance and freshness.
[Winemaking Process]
Cold Clarification: After gentle pressing, the hand-harvested grapes undergo natural cold clarification at 10°C without the addition of enzymes.
Cold Fermentation: Natural fermentation takes place in temperature-controlled stainless steel tanks, with the temperature strictly controlled between 15–18°C. The entire fermentation process lasts approximately 3 to 4 weeks.
Maltography: Depending on the ripeness of the 2023 vintage grapes, the winemaker will perform partial malolactic fermentation to balance the acidity of the wine.
Leech Aging: After fermentation, the wine will age on fine lees for 6 to 12 months to develop a more delicate texture and complexity.

Tasting Note
The wine has a pale golden-yellow appearance, clear and bright. Its aroma exudes classic Chablis style, with notes of flint, wet stone, citrus, and minerality, accompanied by white flowers and subtle tropical fruit. It has a medium body, bright and balanced acidity, and a refreshing palate with a finish of citrus and saltiness.
