At the beginning of the century, Michel, the grandfather, came to settle in Villié-Morgon as cellar master at the “Domaine des Chênes”.After the Second World War, his son Camille succeeded him. He then sought to develop the sale in barrels to bistros in Lyon and Mâcon. At the end of the 1950s, he began to sell his production in bottles and extended the operation by buying back a few plots.


In 1973, with a clientele forged by his father, with whom the estate still works today, Marcel Lapierre took over the farm, which then had seven hectares. It was from 1981, under the leadership of Jules Chauvet, are searcher known and recognized in the Universities of California, that Marcel Lapierre decided to vinify without SO2 or yeast and to cultivate his vines in Biodynamics: without chemical fertilizers or weed killers.


Since the 1980s, all the plots have been worked in accordance with the specifications of the AB label, without chemical fertilizers, synthetic products or weed killers. We prefer to compost and carryout surface plowing in our vines in order to keep the soils alive. Likewise, for the protection of the vineyard, we use non-aggressive treatments, thus preserving the indigenous yeasts living on the bunch and the organisms in the soil. Our vines have been certified by Ecocert since 2004.
In 2004 for Mathieu Lapierre, then in 2013 for Camille Lapierre, Marcel's children took over the family estate. Since then, they have worked with the same sensitivity and with the same commitment as their predecessors to products and their customers.
Once they have reached maturity, the grapes are harvested exclusively by hand, in a small container so as not to damage the fruit before vinification. The bunches are then sorted in a quasi-surgical way, because a clean harvest and an appropriate maturity are essential in our qualitative and taste quests during the vinification. And that's how the grapes leave the vineyard in the direction of the cuvage ...the Gamay bunches are vatted whole and intact. We practice a so-called “carbonic” maceration, Our grapes come from organic farming. We vinify with grace using indigenous yeasts and, as far as possible, without adding sulfur. In all cases, we will never have recourse to chemical additives and other interventions such as acidification, chaptalization, tanification, the addition of enzymes or other inputs whose list continues to grow. in every campaign. During the vinifications and part of the aging, we observe the microbiological activity of our fermentations in our microscope and have our vintages analyzed daily. Our cuvage is constantly under close surveillance: we check, smell and taste each cuvée relentlessly! Our Morgon finishes its fermentation and then its aging in barrels, never new. Our wines will be racked and then placed in vats for bottling. Our blends are never filtered so as not to strip the wine of its color and its aromas. Some batch will be slightly sulphite, especially if destined for international markets. The rest, called “setting nature” is thus offered without any additives.
