Kameizumi Shuzo brewery has beenestablished since 1897 on Shikoku Island, the smallest of the four main islandsof Japanese archipelago. In this warm and picturesque locality of Tosa, KochiPrefecture, between mountains and ocean, producing sake is no an easy task. Theregion is hot and humid, conditions that are not really optimal. Setting up abrewery therefore requires considerable work and in-depth knowledge offermentation techniques. A challenge that Kameizumi Shuzo's small team took upwith panache.
Five people who produce there premium sakesin low volumes, ranging from dry Junmai to Daiginjo full of fruit andfreshness. A particular work has been carried out with the use of a yeaststrain called "CEL-24", created by the local association of sake producers.By sticking to the use of traditional methods, Kameizumi Shuzo brewery isquietly establishing its reputation well outside the prefecture limits. A greatsuccess when we know that the sake of the region had until then been consumedmainly on the spot.

Lively, juicy, fruity, rich tasting andvery well rounded - The 𝗞𝗮𝗺𝗲𝗶𝘇𝘂𝗺𝗶 𝗖𝗲𝗹 𝟮𝟰𝗝𝘂𝗻𝗺𝗮𝗶 𝗚𝗶𝗻𝗷𝗼 𝗡𝗮𝗺𝗮 𝗚𝗲𝗻𝘀𝗵𝘂 is jam packed with enticing aromas developed from the yeast strainCEL-24, the famous original sake yeast developed in Kochi Prefecture.
The use of CEL-24 requires long, coldfermentation and patient brewing.
Tropical notes of Pineapple, Miyazakiapples, Passionfruit and Mango are followed by a full bodied, juicy palate ofrich sweet rice and a tinge of effervescence.
Although a Nama Genshu, it still maintainsa modest and unobtrusive ABV of 14% and the mouthfeel is soft, round andluscious.
It's quite extreme SMV of -15% does notplay out as a sweet and cloying sake, rather due to its bright acidity, it hasa great complexity and balance of sweet, rich, bright and refreshing.
On pairing -> Compatible with a varietyof International cuisines, North Indian, Korean BBQ, cheese & charcuterieplatter and foie gras.
