Nara is the birthplace of Japanese sake.Our brewery was founded in 1719. We pursue sake that can only be made in the modern age to become the next tradition.
Kaze no Mori was started in 1998 with thedesire to make sake made from local rice, freshly pressed, for the local peopleto enjoy.
The name comes from the name of a place inGosho City, "Kaze no Mori Pass. Located at the foot of the lush green Katsuragi Kongo Mountain, a pleasant breeze blows through the pass all year round.
The tradition of Nara sake, established 50 0years ago, has been modified with modern technology, and we will continue to take on the challenge of creating the next generation of sake, sake that canonly be made in this day and age.
Kaze no Mori expresses the difference intaste depending on the type and polish of rice. At ALPHA KAZA NO MORI, we will seek the possibilities of the next sake with flexible ideas and new techniques.


Much of the history of sake takes place in Nara. During the Muromachi Period (1336-1573), it was the temples of Nara that brought sake into the modern age. Sake made by monks in temples are referred to as soboshu (monk’s sake). Sake went from thick, porridge-like doburoku (usually made at home without licenses, and spoiled after 1-2 days) to clear, pressed, filtered and pasteurized seishu (clear sake, recognized by the Liquor Tax Law of Japan as legal sake) that could be shipped and stored for many months. With the establishment of seishu, a shelf stable product, sake became more marketable.


The Kaze no Mori ALPHA series pursues the possibilities of sake through creative techniques by combining the traditional temple brewing technique "Bodhi Hashiro" and modern techniques.
ALPHA2 expresses the individuality of the brewing water, the lifeblood of sake, to the fore by simplifying the character of rice through polishing. Kaze no Mori's brewing water is ultra-hard water with a hardness of over 250 mg/L drawn from deep underground in the Katsuragi mountain range. The minerality derived from magnesium and calcium can be felt to the fullest.

We use reduced pesticide Akitsuho rice produced by Nakanishi Farm in Tsukee, Nara Prefecture. ALPHA2 was redesigned for this rice. The transparency of the flavor was further improved and the texture of the brewing water was maximized.
