Sake Brewery

The KUJIRA brand ("whale" in Japanese) originates from Masahiro Shuzo in Okinawa, Japan. Founded in 1883, the brewery is one of Okinawa's oldest and largest distilleries, and the first in the islands to receive ISO 9001 certification. The Higa family, once granted a distillery license by the Ryukyu Dynasty, continues the Ryukyu Islands' 500-year-old tradition of spirits brewing.

The brand is named after the whale, a species native to the Ryukyu Islands, who are considered guardians of peace and nature. Historically, the Ryukyu Islands have been plagued by war, and local residents view whales as symbols of tolerance and freedom, expressing their desire for peace.

It uses 100% indica rice imported from Thailand (some wines use local indica rice from Okinawa), and is saccharified and fermented with black yeast fungi unique to the Ryukyu Islands, giving the wine a unique rice aroma and tropical fruit flavor.

Winemaking

After distillation in a traditional pot still, the original liquor is aged in first-time American white oak barrels (such as the 5-year and 10-year-old liquors), while the 15-year-old and high-end series are blended and aged in sherry barrels, bourbon barrels and Japanese Mizunara barrels to increase complexity.

The subtropical climate at the southern tip of Okinawa accelerates the interaction between the oak barrels and the liquor, making the liquor structure thick and the aftertaste lasting for a long time.

Delicate oaks, figs, nuts, and butterscotch.

Sweet and long finish, with pleasant fruity, herbal scent and woody texture.
