The uprooting in 2016 of a one-hectare plot of red vines from Château Fontenil, on a clay-limestone hillside, was the opportunity to replant with white grape varieties. We have always loved chardonnay. We are in the family of Chardonnay consumers, with its aromas of peach, white flowers, this refreshing acidity, which is somewhat impetuous in certain years. But we remain Bordeaux, and the tradition in Bordeaux is not Chardonnay. Historically, it would rather be Sémillon, this grape variety with immense specificities: its power, its density, its richness – a wine that ages so well while retaining its roundness and fullness. Bordeaux is also Sauvignon Blanc, a high-quality grape variety in Loire and Sancerrois wines, with its aromas of boxwood, vegetal notes, fresh fruit, grapefruit, essential aromatic elements.

For several years, Sauvignon Gris has been used in the composition of great vineyards; very aromatic, almost lemony, keeping a nice acidity, it is a high quality blending element.

And then, there is a very Bordeaux touch, which tends to disappear, but which we wanted to keep: muscadelle. Be careful, nothing to do with Muscat! It is a very subtle grape variety, with very fine aromas of vine blossom, almost orange blossom. Very complicated variety in viticulture, because very capricious, but when it is well managed, it is the essential spice of the assembly.  -  Michael Rolland
