Founded in 1824, the Macallan winery is located on the Easter Elchies estate on 158 hectares (390 acres) of farmland on the banks of the River Spey in the heart of Speyside. The estate includes 37 hectares (90 acres) of barley grown for whiskey production. It is one of the first legally licensed distilleries in Scotland and has established a reputation as the world's top single malt whiskey since its inception. The birth of Macallan whiskey was largely due to the significant contribution of Spain, North America, Scotland and natural raw materials, as well as the combination of traditional manufacturing methods and craftsmanship.

The Macallan family style has traditionally leaned towards rich, fruity whiskies, which the late whiskey writer Michael Jackson described as "Christmas cake in a glass". This is the result of the exclusive use of sherry barrels to age spirits. The Macallan's persistence in brewing technology, especially in sherry barrels, insists on using sherry barrels for aging and brewing. There is no "barrel" or "barrel change", and only It will be used twice. Even if the wooden barrel can be renovated and reused after use, the flavor of Macallan whiskey will be different compared with new barrels. Macallan wine will never use second-hand or third-hand barrels. But since 2004, bourbon barrels have also been used. The Macallan produces a wide range of whiskeys across four main ranges. The Sherry Oak range includes four expressions ranging in age from 12 to 30 years old. The “Premium Oak” range – aged primarily in bourbon barrels – offers eight different ages ranging from 10 to 30 years. These tend to be lighter than traditional Macallan products.

In June 2018, Macallan opened a new distillery building with a visitor center. The ultra-modern facility has been cut into the hillside and features spectacular undulating, grass-covered timber roofs. There are now 12 wash stills, plus 24 stills. Production will increase by one-third. There were 14 stills in total and are said to be the smallest stills in Speyside, although each still has a capacity of 3900 liters.
