Mollydooker Wines is one of the famous wineries in South Australia, Australia. It is located in the McLaren Vale region, about 45 kilometers away from Adelaide, the capital of South Australia.
The "Mollydooker" in the winery's English name means "left-handed". The winery was named this way because the winery owners, Sarah Marquis and Sparky Marquis, are both left-handed. Their story is full of drama: Sparky used to be a photographer, but switched to winemaking because of his love for wine. He fell in love with Sarah at first sight on campus, and in 1991, the two of them started a wine business together with only $1,000 in start-up capital. After experiencing two bankruptcies, they made a comeback with the help of friends’ funding and market recognition. Their outstanding skills have won them the title of “Australian Winemaker of the Year” many times. In the past decade, they have produced four top wines that have been awarded 99 points by Robert Parker, accounting for one-sixth of such high-scoring wines in Australia during the same period, making them an inspirational role model in the wine industry.
Mollydooker Wines owns 116 acres of vineyards, 50% of which is used to grow Shiraz, and the remaining grape varieties include Cabernet Sauvignon, Merlot, Semillon and Chardonnay. The winery's grape growers and Sparky's father, Leigh Marquis, work together to take care of the vineyards and make a significant contribution to the production of excellent wines.
When bottling, Mollydooker Wines specifically reduces the amount of sulfur dioxide added and instead injects nitrogen to prevent wine oxidation, while preserving the fruity aroma and reducing the risk of some drinkers being allergic to sulfides or experiencing headaches. In response to the method of adding nitrogen to protect the wine, the owner invented the Mollydooker Shake, which is unique to the winery. A small glass of wine is poured from the bottle, and the cork is put back in and the bottle is shaken vigorously to allow air to enter the wine. This releases the nitrogen that is integrated into the wine, instantly restoring the wine's vitality and fruity aroma. It is said that this method works every time.
The grapes are sourced from McLaren Vale and Langhorne Creek and fermented in 100% American oak barrels, 43% of which are new and the rest are old. While the initial fermentation reveals the health and vitality of the grapes, some of the grapes are then chilled to 3.5°C to extract colour and flavour from the skins.
This is a rich and expressive red wine. When you open the bottle, you can feel the vibrant fruity aroma of black cherry and fresh plum, and the rich dark chocolate and licorice fragrance make the flavor more rich. When you take a sip, you can immediately feel the perfect tannin taste and rich fruity aroma combined with each other to create a more wonderful flavor, just like a boxer throwing a heavy punch of aroma.
