🇪🇸 Spanish Black Hair Pig

The Iberian pig is mainly found in the woodland pastures of west-central Spain and the northern part of the Andalucía (Andalucia) region. The area is typical of Mediterranean nature, with extensive pastures and forests dominated by green oak and Spanish cork.
The pigs raised in these extensive pastures are mainly fed on the fruits of these trees, the Bellotas, which are essential for obtaining the true Iberian Ham.
Every autumn, from October to January, when the acorns of the Montanera fruit, the Iberian piglets are released to run and forage freely on the oak-fringed pastures of the Dehesa, where the Iberian pigs feed on acorns (600-800 kg/pig), as well as on wild herbs, grasses, and olives, which gives the meat a special flavour, This gives the meat a special flavour, a delicate texture and a very strong aroma. The Iberian pig is fattened up and slaughtered in autumn to make ham. It is dried for at least 24 months, preferably 48 months.
