🇪🇸Spanish Iberico pig

In the past, when it came to air-dried ham, everyone only knew Parma Ham in Italy. However, in recent years, Spanish food has become very popular, and even the local Iberico Ham, which is fat, black, and born with black hooves, has gradually emerged. ;This breed of pig has a low yield, and the feed is exquisite, which makes it both sweet, fragrant and oily, and has attracted everyone's attention; Waiting for the wine father to unlock the delicious code of this black haired pork leg for everyone!


Iberian pigs are mainly found in the forest pastures of central-western Spain and northern Andalucía (Andalusia) region. The area is a typical Mediterranean natural environment, including vast pastures and forests dominated by green oak and Spanish cork oak.


The pigs raised on the extensive pastures are mainly raised on the fruit of these trees - Bellotas (acorns). Bellotas are essential to obtain real Iberian ham.


Every autumn, from October to January of the following year, when the acorns of Montanera bear fruit, the Iberian piglets will be free to run, grow and forage on the Dehesa pasture full of oak trees. (600-800 kg/piece) is the staple food, and will also eat wild grasses, herbs, and olives during the period, so the meat has a special flavor, a delicate taste, and a very strong aroma. Iberian pigs are fattened and slaughtered in autumn to be made into ham. Air dry for at least 24 months, preferably 48 months.










The hand-cut Iberico pig is really cut piece by piece, cut along the texture of the ham, which is more oily and tasteful than machine-cut. Made from 100% pure blood Iberian pigs, the hind legs (Jamón) are interlaced with muscle and fat due to long-term exercise, and the meat is softer~ The pigs are naturally free-range, and acorns are the staple food during the fattening period


I place an order with Montesano, a Spanish meat factory, slice it first, and then airlift it to Hong Kong, so the shelf life is very long~~




Edible Tips


Take it out of the refrigerator (4-6 degrees) and warm it with hot water and transparent packaging at about 20 degrees before eating. The black-haired pig will slowly emit a delicate nutty aroma and fresh sweetness. The aftertaste is luscious and long-lasting.

Q1. How expensive is Iberico Ham?

Wine Dad: Iberico Ham (Iberian pig), produced in Spain, also known as black hair pig, with less hair and black skin~

The most valuable reason for the Iberian pig is of course that it eats more acorns, which gives the pork a unique aroma of hazelnuts, and the fat penetrates into the meat. Its fat is mainly unsaturated fatty acids, and its nutritional value is similar to that of olive oil, so this pig has the nickname "the olive tree that knows how to walk"




Q2. Iberico Ham has grades?

Wine Dad: can be divided into 3 levels. Acorns are the main food for Iberico pigs, so the grade is also determined by their feeding ratio, namely the top Bellota (about 60% eat acorns), Recebo (about 30% eat acorns) and Cebo (100% eat acorns) cereals)




Q3. Is the longer the drying time, the better?

Wine Dad: Basically, it can be said like this, but it also depends on the size, weight and fat distribution of each ham. Generally, it can be divided into 20, 36 and 48 months, but the taste is more reliable based on the series.




Q4. Is ordering the best?
