Tasting notes indicate that this golden-colored wine opens with intriguing aromas of honeysuckle, honey and candied fruit, and orange peel, intertwined with flavors of almonds and vanilla. On the palate it is rich and full-bodied, with sweetness of ripe peaches, jam and caramelized nuts, and a long, soft finish. Prince de St. Aubin Sauternes is best served chilled, at a temperature of around 10-12°C, to emphasize the sweetness and balance the vibrant acidity; it goes well with rich dishes such as crème brûlée, fruit pies, or blue cheese; of course, any other flavor of cheese is also a good choice.
