Vineyard Location :

The almost 160 hectares of Fattoria La Maliosa are located in the hills of the Maremma Grossetana, a part of Tuscany that shares its borders with Lazio and overlooks the Tyrrhenian Sea. It’s located between the Fiora and Albegna Rivers in an area historically inhabited by the Etruscans. Geologically, there are important differences in the farm’s land formation age, ranging from 10 million to 10,000 years ago. This can be seen in its present stratigraphic structures, sedimentation and mineralogical and chemical concentrations. Its proximity to the coast creates a mild Mediterranean climate, which is unlike the more continental climate of other Tuscan hilly areas.



In The Vineyard

Located in the Pitigliano area on volcanic soils, the 30-35 year oldvineyards are at a height of about 300 m,a.s.l. The training system isespalier with guyot pruning, with a simple or double fruiting cane.Soil and plant management are carried out according to the MetodoCorino, an exclusively vegetal-based biodynamic viticulture. Specifccare is given to soil quality and vine-plan longevity, also by the useof hay-mulching produced within the farm. The vines are tie to theespalier without topping and leaf activity is prolonged until late inthe season.

The grape harvest is the fundamental moment in our wine makingprocess and is achieved through a rigorous manual selection of thegrapes.

In The Cellar

The grapes are destemmed and fermentation begins through naturallocal yeasts. During fermentation, only a regular punching down iscarried out beginning from 60 hours after placing the musts in thevats. Maceration continues for four weeks, then the wine, includingthe part derived from the soft pressing of the pomace, is transferredto wooden barrels where it ages for about 5-6 months. No invasiveoenological interventions are carried out, nor are additives, includingSO2, added.

The Wine

La Maliosa Saturnia bianco is made with equal quantities of Procanicoand Trebbiano toscano grapes. The total sulftes value is less than10mg/litre. The alcohol content is 12.50%
Tasting notes:
The color is yellow with greenish reflections. On the nose fruity withlight balsamic hints. In the mouth, it is pure, fresh and balanced
Pairing suggestions:
Seafood appetizers, white meats, oily fish. Not overly aged cheeses, LaMaliosa Saturnia bianco is a living wine in constant evolution. Wesuggest you take the time to enjoy itstransformations.
Serving temperature: a few degrees lower than room temperature.
As no products of animal origin are used in the vineyard or in the cellar,La Maliosa wines are also suitable for vegetarian and vegan diets
