In Italian, “Sete” translates to “thirst” or “craving.” This name represents more than just the natural human urge to drink; it symbolizes the founders' profound desire to transform their lives and revitalize their native land. It also echoes the French phrase “Vins de Soif” (thirst-quenching wines), which refers to those fresh, light, and effortlessly enjoyable bottles. After all, isn't wine ultimately born to bring us thirst-quenching pleasure?
The Sete estate is located in Priverno, a small town in the Latina province of the Lazio region in central Italy, roughly 100 kilometers south of Rome. Nestled between the Lepini Mountains and the Circeo National Park, with the Amaseno River flowing through the valley, it is truly a blessed terroir. This region once boasted a rich history of agriculture and viticulture, affectionately called the “lake of vineyards” (*lago dei vignali*) by locals. However, from the 1980s onward, social shifts and evolving agricultural models led to many old-vine vineyards being abandoned or uprooted.
The story of Sete began in 2013, brought to life by three young locals from Priverno—Emiliano Giorgi, Arcangelo, and Martina. Having participated in several harvests at the renowned natural winery Le Coste, Emiliano was deeply inspired by their natural farming philosophy. Driven by this vision, he decided to return to his roots and launch an agricultural project named “Sete.” It was an experiment to fulfill their winemaking dreams, born from a heartfelt desire to give back to their land—and that is how the Sete of today came to be.

Today, Sete manages around 5 hectares of vineyards distributed across 12 distinct micro-plots. Rather than planting new vines, their mission is to seek out and rescue abandoned old vines, some of which are over 40 years old. These vineyards are scattered throughout the municipalities of Priverno, Roccagorga, and Maenza. The terroir features soils primarily composed of clay and silt, with subtle traces of sand and limestone.
In terms of farming, Sete adheres to a philosophy of letting nature take its course. They reject chemical pesticides, perform all vineyard work entirely by hand, and have earned the "Suolo e Salute" organic certification. What makes them truly unique is their revival of the 1960s traditional "polyculture" model, where they grow vegetables alongside the grapevines (*Orto in Vigna*). This approach does more than just recreate the self-sufficient charm of old-school rural life—it actively fosters biodiversity, significantly boosting the health of both the soil and the vines.

Sete’s winemaking philosophy can be beautifully summed up in a single idiom: “completely natural.” They refer to their creations simply as “grape juices,” stripping away all over-packaged oenological concepts. With no fancy techniques, no high-profile winemakers, and absolutely no high-tech intervention, it is simply a return to the purest essence of wine.
