Eigashima Brewery has long been a pioneer in the Japanese sake industry, holding a leading position for many years. Its history dates back over 300 years, when the founder's father began brewing sake using locally sourced rice and pure, sweet well water, laying the foundation for the brewery. In 1888, his second son, Heikichi Urabe, inheriting his father's business acumen, established Eigashima Brewery Co., Ltd. with the ambition to expand Eigashima's local sake brewing to all of Japan. The company motto was "Honesty," derived from a Chinese poem. This marked the beginning of Eigashima's golden age in the Japanese sake brewing world.
By 1919, it had become the first distillery in Japan to obtain a whisky-making license. A family-run conglomerate and one of Japan's top 100 sake producers with over a century of history, Ei Kejima Shuzo is a pioneer in the history of the Japanese sake industry. Its brewers continuously strive to develop the smoothest-tasting whisky, and Akashi whisky is the result of a century of refinement driven by this belief.

Distillation

【High-Quality Rice】
Rice from the Harima Basin in northern Akashi (known as Banshu rice) has always been an important grain-producing region, and is the origin of the "King of Sake Rice" – Yamada Nishiki. Combined with the sweet well water from the Akashi beach, this renowned brewing method forms the foundation of Ei Kejima Shuzo's great achievements.
【Honest Heart and Technique】
Every sake is a product of the brewer's dedication, and harmony among people is crucial to creating good sake. The brewers, passionate about sake, have inherited the distillery's century-old mission of "honest heart and technique," hoping that everyone can experience the moving power of this heartfelt creation.
The Eijima Distillery primarily uses Japanese white oak casks, Spanish sherry casks, and American bourbon casks. With over a century of history, some of its rare white oak casks are nearly half a century old. As one of Japan's four major distilleries, Eijima Distillery insists on using only the finest imported barley, meticulously crafting each stage—grinding, fermentation, and distillation—with unparalleled patience to produce high-quality spirit.
Shinoheishi Whisky is crafted by the head distiller, using Eijima's unique century-old traditional whisky blending techniques and sake brewing philosophy. The whisky is meticulously blended with spirits aged for over three years in bourbon, sherry, and Japanese shochu casks, achieving a balanced overall flavor and elevated quality. It is best enjoyed on the rocks or neat. Shinoheishi Whisky pairs exceptionally well with seafood.
