Chateau Olivier is located in the Pessac-Leognan sub-region within the Graves appellation of Bordeaux, France. In 1953, the Graves classification system was officially established, and a total of 16 Crus Classes de Graves were selected. Among them, there are only 6 wineries with both red and white wines, and Chateau Olivier is one of them, which can be said to be the leader in the Graves production area.
Chateau Olivier is a very old winery, dating back to the medieval period, and is considered one of the oldest wineries in Bordeaux. It is said that the Black Prince Edward of Woodstock (1330-1376) liked to hunt there because of the abundance of game in the surrounding forests. Since the 19th century, the estate has belonged to an old Bordeaux family, the de Bethmann family. In 1867, Alexandre de Bethmann was elected mayor of Bordeaux, and his Bethmann family later occupied Chateau Olivier in 1886. In the heart of a vast estate composed of forests, meadows and vineyards, Chateau Olivier emerges from the woods as if in a clearing. The quality of its beautiful architecture, water bodies and annexes make it a special place in nature, just 11 kilometers from Bordeaux. To this day, Chateau Olivier is still run by descendants of the Bethmann family. In recent years, the family has continued to increase investment in the winery, repairing the winery, updating grape growing and winemaking equipment and technology, and inheriting the tradition and essence of this historic winery.
The vineyards of Chateau Olivier offer rare terroirs for both red and white wines. The soil composition here is relatively complex, mainly a mixture of Gonzian gravel and limestone clay, and also contains various soils such as quartz, chert, and flint. The winery will cultivate suitable varieties according to the characteristics of these soils and local conditions. The winery has 60 hectares of gravel vineyards on clay limestone foundations, of which 52 hectares are used to grow red grape varieties. Six different grape varieties are planted, including Cabernet Sauvignon, Plum. Merlot, Cabernet Franc and Petit Verdot, the average age of the vines is 20 years. The remaining 8 hectares are planted with white grape varieties, including Sauvignon Blanc, Semillon and Muscadelle. The average age of the grapevines is 30 years. The planting density of grapevines in the park ranges from 8,000-10,000 plants/hectare. In order to tap the potential of the vineyard's terroir to a greater extent, the technical team of Oliver Winery conducted precise geological surveys of the vineyard to gain a deeper understanding of the terroir.
The winery respects nature and uses an organic approach to manage vineyards. The winery has obtained the Haute Valeur Environnementale (HVE) Level 3 certification recognized by the French Ministry of Agriculture (Level 3 is the highest and most Strict certification level) and ISO14001 environmental management system certification (Environmental Management System). After the grapes reach the ideal maturity, the Oliver Winery team will manually pick and screen the grapes for the first time. When making genuine white wine, in order to maximize the extraction of flavor substances from the grape skins, the winery first allows the white grapes to be macerated with their skins on for a period of time, and then fermented in oak barrels that account for one-third of the new barrels. Aging on lees for another 9 months. When making red wine, a period of maceration is required before and after alcoholic fermentation. The maceration time is determined by the technical team based on factors such as the maturity of the grapes and the amount of tannin extracted in each vintage. Alcoholic fermentation will be carried out in truncated conical temperature-controlled stainless steel tanks for 10-30 days, followed by malolactic fermentation (Malolactic Fermentation), and finally the wine will be placed in French oak barrels with a ratio of one-third new barrels. Aged for about 12 months.
Chateau Olivier produces wines of great charm and are classic examples of Bordeaux blends. Chateau Olivier, Pessac-Leognan is the real red wine of the winery. It has a pleasant floral and fruity aroma, and the combination of Merlot and Cabernet Sauvignon gives this wine excellent aging potential. As time goes by, it will show a very delicate velvety feel and elegant characteristics, and the taste will be even more wonderful. Chateau Olivier Blanc, Pessac Leognan is the real white wine produced by the winery and is one of the best dry whites in Bordeaux. The wine is light yellow in color, exuding obvious aromas of citrus, white flowers and pineapple. The taste is balanced, fresh and fruity, and rich in smoky and mineral flavors. The Semillon gives it a rounded character and a long aftertaste. In addition, the winery also produces three other Pessac Leognan fine wines (two red and one white).
