Winery

Gyejacquot Champagne is a boutique family-owned winery in France's Champagne region. Founded in 1970 by Michel Gyéjacquot and his brother Daniel, it is now led by second-generation brothers Cyril and Frédéric Gyéjacquot.

Region

The winery is located in Celles-sur-Ource, in the heart of the Aube appellation in Champagne. Its vineyards span four surrounding villages, encompassing 20 individual plots totaling approximately 8 hectares. The winery primarily cultivates Chardonnay, Pinot Noir, and Pinot Meunier, with a limited sale of Pinot Blanc. Blanc, as the entire Champagne region encompasses only 75 hectares.

Adhering to the philosophy of "quality grapes make quality Champagne," the winery employs sustainable vineyard management methods, prioritizing soil health and biodiversity. They avoid chemical pesticides and control yields through hand pruning and green harvesting to ensure fruit concentration.

Winemaking

After harvest, the winery meticulously completes the entire grape production process, from pressing to bottling, in its own cellars to ensure precise quality control. Stainless steel tanks are used during fermentation to preserve the fruit's aromas, and some wines undergo malolactic fermentation in oak barrels to enhance complexity. Non-vintage Champagnes are aged on their lees for at least two years, while vintage Champagnes spend longer, resulting in delicate bubbles and rich, layered textures.

This has an array of biscuits, walnuts, apricots, cream and lemons on the nose. Salty and flavorful on the palate, with a medium body and fine bubbles. It’s dry, showing plenty of tension. 30% pinot noir and 70% chardonnay.
