Patrick founded his own winery on July 1, 2008, marking the beginning of a new chapter in his life. After establishing himself as an independent winemaker, Patrick positioned himself as an advisor. He provides practical advice to viticulturists from a winemaker's perspective, ensuring each vineyard showcases its terroir and maintains consistent quality. This philosophy has allowed him to build long-term partnerships with Chablis's finest grape growers, prioritizing the selection of exceptional grapes (old vines and the highest quality fruit) to create wines that fully express the terroir of each vineyard. These superior grapes enable Patrick Piuze to produce approximately 110,000 bottles of wine annually. Through his dedication, Patrick's wines consistently reveal the authentic and rustic character of Chablis, its profound and expansive terroir, and its rich and complex flavors.

Montmains, a Premier Cru vineyard located southwest of Chablis, is one of the most famous and largest Premier Cru vineyards in the Chablis appellation of Burgundy, France.

Located on the left bank of the Serein River, its wines are typically cool and tight, rich in minerality and citrus aromas, often with a smoky character. The region's deep soils, containing Kimmeridgian limestone and clay, give the wines a solid structure and high aging potential.

Patrick Piuze's plots have extremely thin topsoil, with the vines growing directly on the parent rock (limestone), resulting in wines that are generally cooler and more refined than those from other Premier Cru vineyards.
