今次會為大家推薦法國北隆一位相當低調,但又被行內飲家備受推崇的星級釀酒師:Herve Souhaut
過去三十年多,Herve Souhaut 跟太太 Beatrice 在北隆承接了家族的酒莊和葡萄園,由1993年發展至今,已成為產區內一間最頂尖的酒莊之一。Herve混合了有機和生物動力法技術,酒莊擁有50至100年老樹齡的 Syrah,之前在布根地學師,也跟朋友 Marcel Lapierre 和 Philippe Pacalet 學習,而且更在 Hermitage 產區自然酒大師 Dard & Ribo 的酒莊工作過,這間酒莊在日本現在非常火爆,已達到一瓶難求的情況。老樹Syrah 種植在片岩的花岡岩土壤,由於產區海拔高且地形陡斜,也成為孕育世界上最頂級 Syrah 之地,釀出來的Syrah富酸度,具複雜層次且風格優雅!


酒莊的總面積只有8.5公頃,種植的都是50-100年的老藤。這個外人從來沒有聽說過的子產區Sainte Epine IGP坐落於隆河的右岸,正對Hermitage山,30分鐘可以到達Saint Joseph,朝向東南和南部,在渡河三角洲的炎熱微氣候下,天干物燥,降雨不多,當地的土質有大部分頁岩的成分,因此排水性很好,對於葡萄園的管理。
莊主夫人Beatrice如是說:「自然酒不是放任葡萄藤自身自滅,反之在一顆葡萄藤上花費的時間就要比其他商業酒一個葡萄園要多。為了做好葡萄園管理,我幾乎沒有時間去做其他任何事情!」所有的這些勞作,只是為了一年到頭那珍貴的25000瓶佳釀!


Herve使用整串低溫半二氧化碳浸漬,他盡量多萃取葡萄酒中最微妙最為纖細的酚類物質,堅決反對橡木桶味蓋住果實原本的風味,因此他大部分的產品不用橡木桶,即使用桶也是老桶,所以他的酒即開即飲,有著完美的純淨度和酸度。

正如 Herve 提及他釀酒的理念不喜歡過份綷取單寧和依賴橡木桶。
His philosophy is to compose a balanced set of tannins from the grapes, to make wines with subtlety and finesse.
這種風格跟其他北隆的釀酒者有很大區別,其他北隆生產者普遍強調在釀酒時綷取單寧,所以我地飲開的北隆酒年輕時其實非常封閉難開(酒體好硬),要經長時間陳化熟成才能夠入口。反之,Herve Souhaut 的酒以平衡優雅見稱,就算新年份已非常 expressive 和balanced,既可陳存也適合早飲,絶對是喜歡北隆酒的酒友福音,不需辛苦的在巿場搵舊年份的北隆酒。
Every wine from Souhaut is appealing in its wholesome purity and delectability. Even the “simple” Vin de Pays and Vin de France are stunning, punching well above their weight — they display the effortless finesse for which Souhaut is renowned, without sacrificing strength or complexity. Meanwhile, the single-vineyard Saint Josephs offer a profusion of layers, depth and complex mineral tones that guarantee long and positive evolution in the cellar: they are exquisite beauties that redefine the appellation, at once expressive and cellar-worthy.
