JM Seleque Champagne began in 1965 when Henri, the grandfather of the current owner Jean-Marc, began to plant grapes in the sub-regions of Moussy and Pierry in Champagne and bottled them independently in 1969.
Later, Jean-Marc's father Richard took over the winery, led the winery into the modern brewing world, and expanded the winery's vineyard territory. In 2008, Jean-Marc ended his overseas winemaking work and returned to the winery.
Yes, Jean-Marc, who was born in a wine and clothing family in Champagne, did not choose to stay at home to inherit the family business after graduation. Instead, he went to the sparkling wineries in the United States and Australia under the "enemy camp" of Moët & Chandon to work as a winemaker.
His experience in different countries made him deeply realize that the quality of grapes is the prerequisite for making good wine. And he has always adhered to the attitude of practicing to gain true knowledge, rather than studying blindly.
After he took over the winery, the winery switched to organic cultivation and began to promote biodynamics two years later. However, he did not apply for biodynamic certification because he believed that the climate in the Champagne region is very changeable and often encounters bad weather. If he applied for certification, he would inevitably be constrained when dealing with extreme weather.
Not only that, he also often establishes close contact with winemakers in Burgundy and Champagne to discuss the development and prospects of organic farming and biodynamics. He not only wants to convert vineyards to organic farming and biodynamic farming, but also supervises the thorough renovation of winery buildings and collects oak barrels of different sizes from top coopers to bring back to the winery for winemaking.
In recent years, many wineries have adopted egg-shaped fermentation tanks as fermentation containers for base wine, but Jean-Marc expressed his opposition to this: "I only have one cement egg-shaped fermenter in my winery. I think it makes the wine easier to drink, but it is at the expense of the skeleton of the wine, so I will not use it easily."
The winery's vineyards are distributed in 6 villages and 45 different plots. The owner has carried out meticulous field management on each vineyard, which is also the reason why the winery's champagne is outstanding. It can harvest mature grapes while retaining natural high acidity, which is extremely rare in the Champagne region.
Since 2011, all base wines fermented in oak barrels have stopped undergoing malolactic fermentation, which can retain high acidity, reduce fermentation temperature, and use more wild yeast, which can bring more flavor and body to the wine. Today, the ratio of oak barrels to stainless steel tanks is about 6:4. He will decide which fermentation and maturation container to use based on the wind characteristics of different plots.
For some vineyard plots with younger vines, Jean-Marc uses large 200-liter oak barrels. He also experiments on small-scale with ceramic pots and cigar-shaped oak barrels of different sizes. Finally, Jean-Marc also extended the time for the base wine to mature on the lees in the oak barrels and the time for the secondary fermentation to mature on the lees, making the wine more integrated.
Finally, by improving the vineyard environment and achieving more ideal grape ripening, he was able to gradually reduce the amount of sugar added after disgorgement, making the champagne taste more refreshing.

Solessence 是由經典的三大品種:霞多麗、黑皮諾和皮諾莫尼耶混釀而成,葡萄主要來自Pierry / Moussy / Epernay / Mardeuil / Dizy / Boursault / Vertus 7個產區。
Solessence 集合了酒莊在不同產區的地塊,將他們融合在一起,並且其中部分會在不銹鋼桶中陳釀,減少橡木桶的影響,盡可能保留葡萄的本味。
在瓶中進行陳年的時間,即使是經典款也比法定時間多出了不少,至少都是兩年的時間。
最後的裝瓶補糖也是遠遠低於大多數(不超過2g/L),而且不經過任何過濾以及澄清步驟進行裝瓶。
