Billaud Simon Chablis

Billaud Simon is a renowned winery in the Chablis region of Burgundy, France. Its history dates back to 1815, founded by Charles Louis Noël Billaud. Today, the winery is owned and managed by the Billaud family, who continue the tradition of producing high-quality Chablis wines.

Billaud Simon owns approximately 17 hectares of vineyards on Chablis's unique Kimmeridgian soil. This is a famous ancient soil composed of marine sediments, algae, and shells, named after a village and bay in Dorset, England's Jurassic Coast. The winery is known for its emphasis on terroir-based winemaking, showcasing the unique character of its Chablis vineyards. The winery owns some of the most prestigious Premier Cru and Grand Cru vineyards in the Chablis region.

 

Four Grand Cru plots: Les Clos, Vaudésir, Les Preuses, and Les Blanchots.

Four Premier Cru vineyards: Montée de Tonnerre, Fourchaume, Mont de Milieu, and Les Vaillons.

Billaud Simon's winemaking philosophy emphasizes minimal intervention, allowing the terroir to fully express itself. Grapes are hand-harvested and fermented using local natural yeasts to capture the region's authentic character. Fermentation and aging are typically done in stainless steel tanks to maintain the freshness and purity of Chardonnay.

Billaud Simon wines are known for their crisp acidity, minerality, and elegance. They often exhibit aromas of citrus and green apple, along with typical burnt stone and chalk flavors characteristic of Chablis.
