Domaine Daniel-Etienne Defaix, located in the Chablis appellation of Burgundy, France, is one of the oldest wineries in the region.
The winery's origins date back to 1610, with the Defaix family cultivating grapes in Chablis since the 17th century, a tradition spanning over four centuries.
Today, Daniel-Etienne Defaix, the fourteenth generation of the family, continues this long-standing winemaking tradition and is leading the winery to new heights. His son, Paul-Etienne Defaix, is also involved in the management of the family winery, symbolizing both the continuation of the family business and the growth of a new generation.
The winery owns approximately 28 hectares of vineyards, all planted with Chardonnay, distributed across different plots in the heart of Chablis, including Chablis Villages, Premier Cru, and a small number of Grand Cru vineyards.
These vineyards are situated on typical Kimmeridgian soils, a limestone-rich environment rich in marine fossils that imparts a unique minerality and freshness to the wines. The main vineyards include the following:
* Premier Cru: The winery is renowned for its Premier Cru vineyards, selecting only the finest plots each year to produce high-quality wines.
* Les Lys: Facing southeast, the soil has a high limestone content, producing wines with aromas of white flowers, lemon peel, and minerality, exhibiting an elegant style and balanced structure.
* Côte de Lechet: One of Chablis' oldest vineyards, with steep slopes and abundant sunshine, producing wines known for their intense flint and shell fossil flavors, bright acidity, and excellent aging potential.
* Vaillons: The soil combines clay and limestone, producing rounded wines with ripe citrus aromas, a soft and approachable palate.
Grand Cru:
Les Blanchots: Located in the southeast, the soil is primarily white clay and limestone. Wines from this vineyard are delicate and complex, with aromas of honey and white peach.
Les Grenouilles (Frog Vineyard): The name is said to be related to its low-lying terrain and the abundance of nearby water sources in the past. Located in the heart of the Grand Cru area, close to the renowned Les Preuses and Vaudésir vineyards, Les Grenouilles has a gentle, southeast-facing slope and enjoys ample sunshine.
The winery practices organic farming, limits the use of chemical pesticides, and maintains meticulous vineyard management, insisting on mechanized harvesting. You read that right—this practice is generally considered reserved for large-volume, inexpensive wines, but the owner has a different perspective. He believes that utilizing technology and adjusting methods to suit the vineyard ensures the grapes are harvested in their ideal condition.
In winemaking, Daniel-Etienne avoids oak barrels, opting instead for stainless steel tanks for fermentation. The wine is allowed to remain in contact with fine lees for 18 to 30 months, and some are even aged for 8 to 10 years before bottling.
During vinification, the natural fine lees are regularly stirred with the wine, for 24 months, to enrich it with the aromas characteristic of its origin. Over time, this imparts more complex aromas and fresh fruit flavors, which the owner calls "the fat of the wine," enhancing its aromatic persistence.
No sulfur dioxide is added before bottling; only the carbon dioxide naturally produced during malolactic fermentation is retained. The wine is unfiltered and unclarified—"We won't remove what we've been waiting for..."—bottling is done under nitrogen atmosphere, followed by at least 6 to 12 months of aging in the cellar, allowing everyone to enjoy the wine at its peak.
