The history of Jean-Paul & Benoit Droin dates back to 1620. The Droin family, rooted in the Chablis appellation of Burgundy, France, became one of the oldest winemaking families in the region. Through 14 generations, the winery has maintained a deep reverence for and exploration of the terroir. In the mid-20th century, the family faced the challenge of modernization: in the 1960s, the winery pioneered frost protection technology to safeguard the vines from extreme weather; in 1973, former owner Paul Droin redesigned the vineyard layout and innovated the bottling process, laying the foundation for the modern winery.
In 2014, the 14th generation owner, Benoît Droin, officially took over, ushering in a new era for the winery. He streamlined the vineyard area to 26 hectares, eliminating inefficient plots and concentrating resources on top-tier terroir; simultaneously, he introduced biodynamic farming methods, reducing chemical intervention and propelling the winery onto the international stage. Today, Domaine Droin has become one of the most representative "new classic" estates in Chablis, standing shoulder to shoulder with legendary estates like Raveneau and Dauvissat.
Wine critic Neal Martin commented, "People often list Domaine Raveneau and Vincent Dauvissat as the greatest representatives of Chablis, but I would like to add a third—Domaine Jean-Paul & Benoit Droin. The winery continuously improves quality, repeatedly standing out in fierce competition. Now it's time to accept Droin as one of the representative wineries of Chablis."
Terroir Philosophy: The Ultimate Expression of Kimmeridgian Soil
The soul of Chablis lies in its unique Kimmeridgian soil—a blend of Jurassic marine fossils and limestone, combining breathability with mineral deposits. Domaine Droin's vineyards span four AOC appellations, showcasing distinct layers of soil composition:
Grand Cru:
Blanchot: Southeast-facing steep slopes covered in white clay impart light minerality and citrus aromas to the wines (e.g., the 2017 vintage received 99 points from RVF).
Valmur: A limestone base mixed with clay, producing a grand "Chablis-Burgundy Pinot Noir" with silky tannins.
Premier Cru:
Vaillons: High-altitude plots on the left bank, flint and pebble soils bring sea salt and white floral aromas, with a crisp, dewy acidity.
Montée de Tonnerre: Warm slopes on the right bank, rich in iron-rich clay, giving the wines complex layers of tropical fruit and custard.
Viticulture and Winemaking Techniques:
Low-Intervention Viticulture: Herbicides and pesticides are prohibited; horse-drawn plowing is used to maintain soil activity; old vines are strictly pruned, with yields controlled at 45-50 hl/ha.
Biodynamic Practices: Fully implemented since 2015, harvest time is adjusted according to lunar phases, natural yeasts are used for fermentation, and the proportion of oak barrels is controlled at 20%-40% (Grand Cru) to avoid over-oaking.
Innovative Aging Techniques: Soft filtration and DIAM5 natural stoppers are introduced to maximize the preservation of wine freshness. Since 2015, a blended aging method (oak barrels and stainless steel tanks) has been adopted to balance fruit aromas and complexity.
While adhering to biodynamic practices, Jean-Paul & Benoit Droin actively explores the boundaries of terroir expression: since 2022, soft filtration has been used on some wines to retain more floral and fruit aromas.
For nearly 400 years, the Droin family has never left this land, nor abandoned winemaking—a truly commendable commitment. Perhaps for them, winemaking is not only a means of making a living, but also a way of connecting themselves with their ancestors.
