[Chateau Olivier歷史概述]

奧利維爾酒莊 (Chateau Olivier) 是波爾多最古老的酒莊之一。波爾多葡萄酒歷史學家認為該莊園的歷史可以追溯到 11 世紀。在城堡附近還可以看到一些原始風格的古老遺跡。當中甚至還有護城河和吊橋。因此奧利維爾城堡亦是一個非常適合到訪的酒莊。

[Chateau Olivier 葡萄園的風土]

奧利維爾城堡面積相當大，佔地220公頃。但當中只有 60 公頃的葡萄園。紅酒種植面積為 52 公頃，種植面積為58% Merlot, 40% Cabernet Sauvignon and 2% Petit Verdot。曾經亦有種植過 10% Cabernet Franc，但如今所有Cabernet Franc 的葡萄藤都已被移除了。

奧利維爾酒莊的波爾多白酒在8公頃的葡萄樹上種植了78% Sauvignon Blanc, 20% Semillon, and 2% Muscadelle。有趣的是，雖然多年來種植紅葡萄酒葡萄的葡萄園經常改變種植面積，但大多數種植白葡萄酒葡萄的葡萄園都幾乎保持不變，而這些白葡萄藤平均樹齡都已達40年。

Chateau Olivier 的紅酒是在溫控不銹鋼桶中釀造，蘋果酸乳酸發酵在酒槽中進行，Chateau Olivier 的葡萄酒平均在30%的新法國橡木桶中陳釀12至14個月。

Chateau Olivier 的白葡萄酒，33%的葡萄在發酵前會進行skin contact。釀造從 tanks 開始，在法國橡木桶中完成finish，最後酒在裝瓶前經過 9 個月的on lees。

Some welcome freshness and grip here. A little soft still through the finish but with a definite touch of citrus peel and white pear flesh, white flowers also. This has charm and some forward motion along with lifts of spice and slate.
