🏰有這樣一家酒莊，在德國葡萄酒的歷史上有著獨一無二的重要地位，他不僅是世界上第一座雷司令酒莊，早在公元八世紀查爾曼大帝時期便建立，這裡種植的雷司令更是現代雷司令的始祖，最早可查的文字記錄可以追溯到公元817年，如今再世界各地廣泛鍾意的雷司令全名便是以此地命名，他就是Schloss Johannisberg（約翰山堡）

💁‍♀️Schloss Johannisberg（約翰山堡）地處德國萊茵高產區，是該產區最具代表性的酒莊，萊茵高（Rheingau），位於萊茵河東側，沿著萊茵，起於東南 Flörsheim，止於西北 Lorchhausen，在 25 個城鎮中，細分成10 大區（Großlagen），119 個小區（Einzellagen），年產量於德國十三個產區來說，屬於小型，僅 3134 公頃，卻在德國白酒界裡佔有一席之地，主要種植的葡萄品種即是德國有名的麗絲玲（Riesling），隨著氣候變遷，也慢慢重視黑皮諾（Spätburgrunder）。

Schloss Johannisberg也是一個充滿傳奇故事的酒莊，尤其是他的晚收（Spatlese）更是酒莊一絕，在整個德國幾乎是打片天下無敵手，就連德國最好的酒莊Egon Muller(伊貢穆勒)也甘拜下風，俯首稱臣。

不僅如此，約翰山堡的發展還推動著德國葡萄酒的發展。公元1775年的一次小意外，催生了Spatlese（晚收）風格的甜葡萄酒誕生，12年後的1787年，更發展出Auslese(精選)葡萄酒，在算上起源於此的Kabinett(珍藏)葡萄酒和1858年的第一支冰酒，可以說約翰山堡就是德國葡萄酒的縮影，他奠定了現代德國葡萄酒的發展，是Rheingau（萊茵高）產區最具代表性的酒莊，也是傲然挺立千年的九大世界最古老酒莊之一。

Schloss Johannisberg另外有個晚收酒的傳奇故事，故事發生再1775年。酒莊的葡萄已經接近成熟採收期，正巧富達大教主外出開會，修士們就立刻派信差去請示大主教是否能採收？不了信差再中途突然生病，耽誤了幾天的行程，等到回酒莊出示主教手諭時，所有的葡萄都已過了採收時間，有部分已經長了黴菌，但是修士們照常採收，釀製。竟然發現比以前所釀製的酒更好，晚收酒（Spatlese）就這樣歪打正著的誕生了。所以約翰山堡就是晚收酒的發源地，也造就了全德國的酒莊都生產這樣的招牌晚收酒。

Schloss Johannisberg的葡萄園裡主要種植Riesling（雷司令） 葡萄，這裡種植雷司令的歷史十分悠久，可追溯至公元720年。現在各國所種的雷司令全名即是“約翰山雷司令”。目前，酒莊葡萄園種植密度十分高，每公頃種 植1萬株葡萄樹。每年總共可生產約2.5萬箱葡萄酒。葡萄樹的平均樹齡為30-35年之間。在葡萄園管理方面，一半的葡萄園以鏟子除草，另外一半不除草， 以使土壤產生更多的有機質。這裡的葡萄在成熟後，也是分次採收、榨汁，經過4周的發酵後移入百年的老木桶中靜存，時間約半年之久。到了次年春天的三四月這 些葡萄酒即可完全成熟，隨後裝瓶上市。

Such brilliance and such precise balance enables this medium-sweet riesling to defy effortlessly the rules of the category and confidently swim directly against the current of wine fashion. Supernatural freshness at the finish. Taste this before you die! Drink or hold.

The 2019 Schloss Johannisberger Riesling Spätlese Grünlack is coolish, intense yet subtle, fresh and elegant on the nose, and the fruit is still discreet and free of botrytis. Sweet and clear on the palate, this is a pure, fresh, elegant and tightly structured Spätlese with stimulating salinity on the persistent and grippy finish. Still far too young to be served today but promising. Tasted in June 2020.

This pair was partnered by a 2019 Schloss Johannisberger Riesling Spätlese Grünlack, from the historic Rheingau estate. It is clearly very primal on the nose, offering fragrant scents of pineapple, quince and a light Muscat-like aroma. The palate is well balanced with a fine spine of acidity, not overly complex yet texturally satisfying. There’s good substance on the finish and melon and tinned white peaches on the aftertaste. This is a wine I would cellar away for three or four years.
