BibiGraetz 酒莊成立於 2000 年,因為坐落在 Fiesole 山上,俯瞰佛羅倫薩,在藝術家世家成長且畢於美學院 Bibi,也慢慢地愛上了葡萄酒,最後更決定以此為生, 把自己的藝術天份和創作熱情發揮得淋漓盡致


Bibi 對古老的葡萄藤份外著迷;他格外欣賞古老葡萄藤的精細和純粹度因此Bibi Graetz 莊園中也成了托斯卡納最大的老葡萄園之一。


除了份外熱愛老藤, Bibi也執著地栽種托斯卡納本土品 SangioveseCanaiolo Colorino . 所以, 總括而言, 老藤、高海拔、貧瘠的石質土壤和自然葡萄栽培便成了Bibi釀酒的理念,旨在充分反映每個葡萄園的風土。


Testamatta的意思為 “Crazy Head”,正可說是形容 BibiGraetz 的最佳形容詞:一個積極有創造力, 但又極度執著和充滿熱情的人。 Testamatta 葡萄酒表達了來自山頂老葡萄園的桑嬌維塞的純度、礦物質和透明度,其特點是土壤富含石頭。

Testamatta(BibiGraetz)的旗艦酒, 使用50-80年的老滕Sangiovese葡萄釀造, 225L的小型法國橡木桶中發酵,每日平均Punch Down攪桶8次,然後在小型法國橡木桶在陳年24個月,再陳瓶6個月.


香氣極度豐富, 有澎湃的黑果香氣和紫羅蘭氣息加上濃郁的雪松, 皮革, 巧克力煙燻的風味撲鼻而來,在口中呈現出絲綢般的質感, 單寧滑,結構和層次感十足完美地展現出頂級托斯卡尼膜拜酒的深度和風範!

Finely textured, with a nuanced perfumethat fills the glass and takes you to the intense underbrush of Tuscany. Succulentand yet savoury, this has a lilting freshness that is overlaid with ripe berryfruits, sage and white pepper spice, and clear mineralty in terms of itsscraping texture that makes your mouth water on the finish. Feels light andsculpted and yet has an intensity that skewers you to the spot. This is a greatwine, with scope and imagination that doesn’t want to let you go. Genunielystands out among the wines of this tasting and these are a fine array of wines.As with Colore Bibi Graetz selects only old vines, the youngest 50 years oldfrom five different vineyard sites across Tuscany, all farmed organically.Fermentation in open 225L barrels with natural yeasts and manual punch downs.

Very subtle aromas of cherries, bark, blacktruffles and flowers. Hints of crushed stones. It’s full-bodied, yet very tightand solid with a very tight, minerally structure. Very long and intense. Racyand bright at the end. Powerful, orange-peel and citrus-fruit undertones. Saltyand minerally. This needs time to develop in the bottle. Extremely structured.

The 2018 Testamatta shows elegantSangiovese purity and transparency, starting with delicate wild berry andblueberry tones and finishing long with pretty accents of crushed limestone anda touch of campfire ash. In the glass, the wine is radiant and vivid with aluminous ruby or garnet color. Oak use is reduced to a bare minimum, withbarrels that are up to their 16th year of use. "The older they are, thebetter," Bibi explains. As the wine opens in the glass, it presents prettylilac and violet. This wine represents a blend of fruit from various sites (allwith old vines that are farmed organically) across the region of Tuscany. Thenorthern-most sites close to Florence tend to add the floral notes that are socharacteristic of this cool vintage (which saw a bit more rain than average andextra work in the vineyards to kept these vines healthy). I visited thevineyards with Bibi in 2018 and remember how beautiful the grapes appeared onthe vines. Much of the fruit used here comes from the Vigna del Cancello inCasciano del Murlo, which is midway between Siena and Montalcino. Thesesouthern sites give the wine its backbone and tannins. Bibi Graetz tells methat he struggled to create the blend for this 60,000-bottle release. He decidedon a final blend, only to change his mind and re-blend two and a half monthslater. His second stab was specifically aimed at capturing finesse andsoftening the wine's tannic imprint. Indeed, the wine ultimately offers more inlength (with fresh fruit flavors and bright acidity) than it does in power ormid-palate. The finish is silky, long and very fine.

With a few swirls of the glass, thisreleases alluring scents of fragrant blue flowers, wild berries, pipe tobaccoand menthol. Made from the grapes of old vines of Sangiovese sourced from fivetop estate vineyards, the vibrant, elegant palate features juicy raspberry,Morello cherry, licorice and toasted nuts alongside taut, fine-grained tannins.It's still young and primary, with bright acidity. It needs a few more years tofully develop and will still offer years of pleasure.
