Chateau Pavie Macquin（柏菲瑪凱酒莊）地處法國波爾多右岸的 Saint-Emilion 產區，自 2006 年至今一直穩居 Premier Grand Cru Classe（聖埃美隆一級酒莊）寶座，出品的葡萄酒以其優異穩定的品質而深受大眾青睞。

自1887年起，現莊主的早先 Albert Macquin 先生陸續收購了多個酒莊，獲得了約 26 公頃園地，Chateau Pavie Macquin 由此成型。Albert Macquin 是一位頗具先鋒精神的農業工程師，在根瘤蚜席捲法國時率先宣導並大力推廣嫁接移植技術，為抑制根瘤蚜蔓延做出了卓越貢獻，在 Saint-Emilion 乃至全法國享有諸多讚譽。如今，酒莊由他的外孫 Benoit Corre、Bruno Corre、Marie Jacques Charpentier 及他們的子女共同管理。

Pavie Macquin 酒莊在 1994 年聘請了Nicolas Thienpont ( LePin 家族，車房酒王，他同時打理右岸名莊多不勝數，經他手的酒莊包括 Beausejour Duffau-Lagarrosse 、Paive Macquin、Lacris Ducasse、Berliquet、Puygueraud、Les Charmes Godard 等等) 負責酒莊的經營，同時也請來了 Stephane Derenoncourt，Stephane 是風土方面的專家，擅長特顯風土優點，著重平衡。為世界各地 90 多個酒莊作顧問，其中在2009年，Robert Parker 19個100分評分的酒就有4個出自他管理的酒莊，分別係 Clos Fourtet, La Mondotte, Beauseour Dufau Lagarosse , Smith Haut Lafitte。他所顧問的酒莊以至世界各地包括奧地利，希臘，西班牙，葡萄牙，黎巴嫩，敘利亞，土耳其，亞魯吉亞，墨西哥，甚至在英國都有，被認為是下一位 Michel Rolland，由其帶領釀造的葡萄酒往往深受認可。在 Nicolas Thienpont 和 Stephane Derenoncourt 兩位大師的帶領下，Pavie Macquin 酒莊一路精進，於 2006 年榮登 Saint-Emilion Grand Cru Classe B 等酒莊寶座。

佔地 15公頃，園內多達9種不同的特色土壤，而大多是石灰石黏土。Pavie Macquin 南方毗隣 Chateau Pavie，西北是 Chateau Troplong Mondot ，Chateau Trottevieille 在北方，風土的晚熟特性是由於其葡萄園位於石灰石高原上的堅固黏土所致。黏土擁有顯著保水能力意味著其緩慢加熱，出芽需要更多時間，而高原上的位置則加劇了這種現象。黏土和石灰石板的卓越水質調節平衡了該葡萄園，從而創造了真正的“特色風土”。Pavie Macquin 的 Merlot 在堅固的粘土中生長，賦予葡萄酒以力量和張力，以及深厚的肉味。古老的含粉砂土的泥土帶兇輕盈的感覺，同時保持了石灰石的礦物張力。Cabernet Franc 混釀帶來“骨架”和復雜性。

根據各地塊的風土特性，酒莊因地制宜地種植了 84% Merlot、14% Cabernet Franc 和2% Cabenet Sauvignon，平均樹齡超過 40 年，有些老樹是60年樹齡以上。Pavie Macquin 酒莊秉承尊重風土的理念，採用有機種植法管理葡萄園，通過種植伴生植物及安裝排水系統等種種措施來維持土壤活力及生態平衡。此外，葡萄園工作人員密切關注葡萄樹的健康狀況，及時對失活的葡萄樹進行補種，嚴格控制種植密度，保證培育出優質果實。不僅如此，酒莊團隊還悉心甄選出優質老藤，選用它們的插枝來培育新藤，在延續老藤優良特性的同時促進基因多樣性。

Pavie Macquin 酒莊認為葡萄酒是土壤和葡萄樹的共同結晶，應當反映生態環境的微妙平衡，也應體現不同年份的差異性與當地風土的連貫性。為此，酒莊精准把控每一道釀酒工序，單獨釀造產自不同地塊的葡萄，力求打造展現風土特徵的葡萄酒。釀酒葡萄全部由人工採摘，經過光學篩選及去梗後，部分果實在未破皮的狀態下進入敞口式大橡木桶中發酵，另一部分則採用水泥罐發酵。期間，釀酒人員通過溫和的壓帽工序來適度萃取果皮中的色素和酚類物質等成分。

酒精發酵結束後，酒液會被轉移至橡木桶中進行蘋果酸-乳酸發酵（Malolactic Fermentation），之後在新桶比例為 60% 的法國橡木桶中熟成 18 個月左右，其中包括 6 個月的酒泥陳釀，最終釀出的葡萄酒單寧絲滑，風味濃郁凝練，口感清新，礦物質特徵鮮明，十分迷人。

自 1998 年份起，Pavie Macquin 酒莊的葡萄酒品質就有了顯著的提升。《Wine Advocate》現任主編 Lisa Perrotti-Brown 在 2018 年 6 月品鑒了 1998 年 Chateau Pavie Macquin 紅葡萄酒後，給其打出了 97 分的高分好評，稱其“單寧如天鵝絨般絲滑，酸度恰到好處，餘味相當持久”。此外，Chateau Pavie Macquin 紅葡萄酒的2005、2008、2009、2010、2015、2016及2017年份均獲得了 Robert Parker Team 94 分以上的評價，表現頗為出彩。酒莊目前還發佈了一款副牌酒—— Les Chenes de Macquin, Saint-Emilion Grand Cru Classe。

Chateau Pavie Macquin Saint-Emilion Grand Cru Classe B

This terroir of strong clay on limestone bedrock produces a powerful, fleshy wine with minerality, freshness and generosity.

The Pavie Macquin grape types, predominately Merlot, have found their perfect home in strong clay soils. The molasses soils combined with asteriated limestone give the wines power and tension, as well as a deep meatiness.

The ancient colluvial soils containing silt add a touch of lightness whilst retaining the mineral tension from the limestone.

The Cabernet Franc is in its rightful place in limestone soils, with bare rock, which warm up quicker, allowing the grape variety to develop all its excellence and give the blend its ‘backbone’ and complexity.

The wine is topped off with 2% old-vine Cabernet Sauvignon.

Les Chenes de Macquin Saint-Emilion Grand Cru Classe

Les Chênes (‘the oaks’) come from the trees planted as ornaments and emblems of the cru along the edge of the plateau. Selection is a major part of the quest for excellence: at Pavie Macquin, vineyards are cultivated and harvested in small increments when each vine is perfectly ripe, followed by aging of several plots.

This mosaic of wines, vinified and aged separately, is used to create two final wines: the first is Château Pavie Macquin, and the second Les Chênes de Macquin. In each vintage, the generosity and the typicity of the site are expressed.
