按總產量平均計每間莊只生產一千多瓶 ⁉️ 對比全球對高質白酒的需求，點夠分？

鐘意飲白酒的酒友一定要認識Savennieres，因為產量實在太少，能出口到國外的更少，所以在香港巿場沒有太多人認識，但一講到產區的 Icon 自然酒大師 Nicholas Joly 大家就一定認識，佢支 Coulee de Serrant 新年份都要賣接近一千蚊，而舊年份動輒要2千以上，點解一支Savennieres 白酒售價能跟得上布根地1 er Cru 或 grand cru 白酒？因為Savennieres 有著得天獨厚的風土條件，被形容為 Loire Valley 的 Montrachet ，產區面積只佔130 公頃，共有36家酒莊，產區每年產量只有 4000hl/年，大約 52000瓶，即平均每家平均產量只有1444瓶，全是小規模式的家族酒莊。當地超過9成的酒莊奉行有機自然耕作釀酒，產區有著極佳的Schist 土壤，泥土很淺薄且溫暖，排水優良，葡萄根部需礸進7-8米深去尋找水份和養份，結果吸收了更多不同土層的礦物質，難怪飲Savennieres的白酒均呈現出極豐富的礦物感。

酒莊前身名為 Chateau des Vaults ，歷史追溯至十七世紀，酒莊的庭園建於1850年，當時的擁有者是一個聲望頗高的船主，其後轉手到一位拿破崙傳記作家 Emmanuel de Las Cases 入主酒莊，之後就由其後人持有經營至今，也展開了家族由女性主導釀酒，最初的Marque de Las Cases du Closel 傳姪女 Michele de Jessey手，在2001年交由她的女兒 Evelyne de Pontbriand 即現莊主接手。女莊主是產區協會的主席，故Domaine du Cosel 在產區定位舉足輕重，酒莊著重生物多樣性，強調尊重和保護生態系統，酒莊位置在產區的西南面，得到了Ecocert 和生物動力法 Demeter 認証，發酵只用原生酵母，Sulfites 必需時才加，以保持葡萄酒新鮮純淨的水果氣息。

Clos du Papillon Vinyard 葡萄田跟據Winedoctor所記載: Perhaps one ofthe appellation’s best-known vineyards。葡萄田由片岩、rhyolites及石英組成，生長環境比較困難，迫使根部深入坭土底層找養份。此酒款酒莊分早期及晚期採收葡萄再做blending。採用天然酵母 (native yeast) 發酵，只on lees長達26個月增強質感。

The 2019 Clos du Papillon offers a lovelysense of roundness as it blossoms in the mouth with its ripe apple fruitflavors and subtle pastry characters. What's most intriguing and appealingabout this wine is the sense of attractive bitterness on the finish which holdsthe mouth as if it is a red wine. I discussed this sensation with the owner ofDomaine du Closel, Evelyne de Pontbriand: the tannic appearance jumps up whentasted blind in black glasses. The finish offers mouth-watering acidity andjust a touch of warmth on the finish (the alcohol is 14.2%), which was alsoapparent on the 2018 vintage. Going forward, de Pontbriand is looking towardsgreater freshness in the wines.
