德達侯爵莊園(Chateau Marquis de Terme)位於法國波爾多梅多克(Medoc)產區著名的瑪歌(Margaux)產酒村,酒莊在1855分級(1855 Classification)中被評為四級莊。
德達侯爵莊園的歷史最早可追溯至15世紀,而這座莊園的名稱則誕生於1762年,當時一位名叫弗朗索瓦·佩基蘭(Francois de Peguilhan)的貴族娶妻成婚,而德達侯爵莊園也作為嫁妝跟隨妻子一同入門,這位貴族便是德達侯爵(Marquis de Terme),酒莊的名字也因他而來。此外,在德達侯爵莊園的發展史上還有另一個重要家族——福列哈(Feuillerat)家族,此家族掌管酒莊120幾年,在此過程中,該家族成員一直致力於將酒莊打造成卓越的名莊,最終也成功使得酒莊榮登1855列級莊行列。
1935年,桑涅克勞(Seneclauze)家族成為了莊園的新主人,目前酒莊管理者仍為此家族成員,該家族開啟了德達侯爵莊園的現代發展之路。此外,在2009年,在波爾多酒業巨擘紅酒之父 貝爾納·瑪格雷(Bernard Magrez)效勞多時的盧多維奇·大衛(Ludovic David)成為了德達侯爵莊園總經理。David有著豐富葡萄酒釀造、葡萄園管理以及集團經營的經驗,他的加入為酒莊帶來了技術、葡萄栽培以及設備等方面的革新,進一步促進了葡萄酒品質的提升。
德達侯爵莊園的葡萄園占地39.5公頃,園內土壤類型主要為瑪歌產區典型的礫石土,由石英和石英岩構成,土層深度達4米以上,這種土壤非常適合種植赤霞珠(Cabernet Sauvignon)。此外,相比產區內其他酒莊來說,德達侯爵莊園葡萄園內土層深處的黏土含量更是多一些,因而也十分適合種植梅洛(Merlot)。目前,葡萄園內種有60%的赤霞珠,33%的梅洛以及7%的小維多(Petit Verdot),種植密度為10,000株/公頃,葡萄樹的平均樹齡為35年。酒莊對葡萄園進行分地塊的管理,管理過程中始終注重保護生態平衡。
德達侯爵莊園的葡萄全部為手工採摘,且只有經過嚴格篩選後的葡萄才能進入後續釀酒環節。在釀造過程中,酒莊會使用重力來運輸葡萄汁液,不採用泵送。葡萄汁會被置於混凝土罐、不銹鋼罐或溫控橡木桶中進行發酵,發酵後的酒液會被轉入法國橡木桶中熟成16-18個月(其中新桶比例為50%)。
目前,德達侯爵莊園主要出產五款紅葡萄酒,其中正牌酒——德達侯爵莊園紅葡萄酒(Chateau Marquis de Terme, Margaux, France)的品質尤為優異。這款酒兼具力量與優雅感,酒體飽滿,單寧充沛且十分耐嚼,伴有豐富的水果風味,結構平衡,多次獲得各項葡萄酒大賽以及諸多權威酒評雜誌以及酒評家的高分好評。
Unique, timeless and unbeatable, he is the first representative and the keystone of the estate. This is why it receives the greatest attention in its preparation. After harvests are sorted in the vines and then carefully on the table, the vinification is piecemeal and little interventionist. The alcoholic fermentation takes place in concrete vats and temperature-controlled stainless steel vats before aging for 16 to 18 months in oak barrels, for a production of around 80,000 bottles annually.
Château Marquis de Terme fully expresses its typical gravel terroir through its blend of a majority of Cabernet Sauvignon, Merlot and Petit Verdot. The vineyard is planted on a historic gravelly terroir, in the heart of the Margaux appellation. Precision, technique and new materials bring more purity to the wines. Density and freshness reveal silky notes with elegantly worked tannins, specific to the wines of Marquis de Terme.
The history of Château Marquis de Terme began in 1762, when Mademoiselle Ledoulx d'Emplet brought the estate as a dowry to François de Peguilhan, the Marquis of Terme. The property has belonged to the Sénéclauze family since 1935. The 1762 cuvée is the expression of this timelessness. It is thought to be the representation of the personality and the typicality of its terroir. The 26 plots of the vineyard are included in the composition of the cuvée. The 1762 cuvée has a deep color with purple reflections. Rich bouquet, with floral, blackberry, dark chocolate, bitter orange and liquorice notes. The mouth is full, round and creamy. We find the flavors of small black fruits on a mocha finish.
To offer a new tasting experience, it is sometimes important to inject new blood. Since 2012, Château Marquis de Terme has been producing a unique wine, a great Margaux fermented in barrels and aged in vats. What makes the originality of this wine is its elaboration against the age-old customs of the Châteaux du Médoc. After fermentation for 2 months in barrels, this wine from carefully selected plots is aged in ovoid concrete vats and stainless steel vats for almost a year. The barrel gives the wine a subtly woody side that does not alter the round and fruity side provided by aging in egg-shaped vats. Creative and free wine, it leaves room for experimentation in blending and aging for a tasting that will seduce adventurers at heart.
Located in the heart of the Esterel massif, a stone's throw from Fréjus, the vineyard makes its way through the pine forest and finds its character between the imprint of volcanic rocks and the influence of the Mediterranean basin.
On the strength of its environmental commitment through ever more natural farming practices, Château Marquis de Terme's escapade in Provence naturally oriented itself towards the signature of a certified organic rosé.
The eastern end of the Côtes de Provence appellation is characterized by a specific geology and climate. Its soil but also its inscription in history established the basis of the recognition in 2005 of the complementary geographical denomination Fréjus.
今日有機會試到正牌2017,德達侯爵是瑪歌4級莊,此酒款用上35年樹齡葡萄,葡萄比例 62% Cabernet Sauvignon、32% Merlot及6% Petit Verdot。16過月木桶陳熟,當中 50%為新桶。James Suckling 同Vinous 也評上93分。
抖氣一個鐘後試飲,香氣帶著紅黑果、雜莓、李子等,也有些野玫瑰的花香氣息,比較特別,未算有很多複雜香氣,相信跟抖氣時間有關,但都已很不錯。入口能感受到血橙、黑櫻桃、Toasty、也有一些橡木、皮革及石墨感,單寧較緊致,酸度適中、收結不錯。
抖氣兩個半鐘左右再試,味道變得更多味,如西莓、烘烤、Mocha等,整體變得較為絲滑順喉。個人認為2017年的正牌德達侯爵還是相對較新,大約可以再陳熟多5-10年才飲較好。
