Champagne Ayala, founded in 1860, stands as a testament to the vision of its founder and the dedication of generations who have maintained its commitment to quality and innovation. The story of Champagne Ayala begins with Edmond de Ayala, a man whose name seemed destined for the world of Champagne. Born into a Spanish-Basque aristocratic family, Edmond arrived in Aÿ in 1855 with a burning desire to unravel the secrets of champagne-making. His charm and entrepreneurial spirit caught the attention of Gabrielle, the only daughter of the Count of Mareuil, whom he married in 1858. As a wedding dowry, Edmond received the Château d'Aÿ and its vineyards, laying the foundation for what would become Champagne Ayala.

From its inception, Ayala distinguished itself as a house of innovation and quality. In 1865, just five years after its founding, Ayala made a bold move that would set it apart in the world of Champagne. At a time when the typical dosage for Champagne was over 150 grams per liter, Ayala introduced a "dry champagne" with only 21 grams per liter of sugar. This pioneering step towards a drier style of Champagne was a statement of the house's commitment to purity and elegance in its wines.

In 2005, a new chapter began for Ayala when it was acquired by the Bollinger family. This acquisition brought renewed focus and investment to the house, including the construction of a new winery in 2007. Under the leadership of new Managing Director Hadrien Mouflard and Cellar Master Caroline Latrive, Ayala began to reaffirm its identity and style.

Ayala’s Le Blanc de Blancs is 100%Chardonnay, produced in small quantities in exceptional years only and fullyexpresses the superb caliber of great Chardonnay from the best Crus of the Côtedes Blancs. It is truly a unique vintage offering.

Tasting

Colour:
With its gorgeous white-gold sheen, the colour is maintained by a delicateeffervescence.

Nose:
The nose is complex, mixing fragrances of ripe yellow lemon, cedar and jasminewith subtle honey (acacia honey) and peppery (Timut pepper) notes.

Palate:
The attack entices with its precision and balance. Full and delicious, thepalate unveils scents of passionfruit, citrus, spices but also plum tart. Thelasting finish gives a smooth, chalky minerality.

This blanc de blancs shows an excellent balance between citrus, stone fruit and chalky minerality. Yeasty, creamy in texture, with excellent freshness, fine bubbles and a dry finish. 5g/L dosage.

Disgorged in November 2018, Ayala's 2013 Brut Blanc de Blancs offers up an elegant bouquet of lemon oil, English walnuts, crisp yellow apples, linden blossom and hints of praline to come with bottle age. On the palate, it's medium to full-bodied, deep and concentrated, with racy acids, a delicate mousse and a fine-boned, elegant profile. Concluding with a long and nicely defined finish, this vibrant and intense wine is one of the finest wines Ayala has released for some time.
