Balblair is located in the Highlands production area of Scotland, UK. It is an ancient distillery with a history of more than 200 years.
In 1790, John Ross established the Balblair Distillery, and written records related to this distillery date back to 1749. In 1824, John Ross's son Andrew Ross began to help manage the distillery. Later, other junior members of the Ross family joined the distillery one after another and were responsible for the management and operation of the distillery until the end of the 19th century. In 1894, James Ross sold the distillery to Alexander Cowan. Under the management of Alexander Cowan, Balblair had offices, stills, brewhouses, kilns and barns. Balblair has relied on rail for the transport of coal and barley since the opening of The Highland Railway Company's Inverness-Ardgay line in 1862. In 1895, in order to better utilize the railway, the distillery was moved about 800 meters north.
In 1911, severe economic conditions forced Balblair to cease production. In 1939, an army occupied the Balblair distillery, a situation that lasted until 1945. In 1948, Robert James Cumming, a lawyer from Banff, purchased the distillery for £48,000 and resumed production of Balblair in 1949. In 1964, the distillery was expanded with a new warehouse and a steam boiler. In 1970, the Cumming family sold Balblair to Hiram Walker, who later merged to form Allied Distillers. In 1980, the distillery was further developed, with the brewhouse roof renovated and two new steel grinding boxes added. In 1996, Balblair was acquired by Inver House Distillers Ltd, opening a new chapter in the development of this historic distillery.
Balblair uses water from Allt Dearg and basically no peat is used in the malt drying process. The distillery has one wash still with a capacity of 12,000 liters and two re-distillation machines (Spirit Still) with a capacity of 8,500 liters. The external shape of these distillers is relatively flat and does not contain debris that increases reflux. Generally speaking, under normal distillation speed, the flavor of the distilled liquor is relatively strong and rough, similar to the style of Vodka. Because Balblair has two re-distillation machines, it can produce whiskey at a lower distillation speed, thereby producing Balblair whiskey with a smooth taste and rich fruit flavor. After the winery puts the wine into oak barrels, it will be transported to the warehouse for aging. Every year, Balblair's winery manager John MacDonald will taste, judge and select the wine. Only when the wine reaches a perfect mature state, Will be bottled.
Balblair's whiskeys are complex in flavor, with strong ester flavors and often core flavor characteristics of apricot, willow, spice, floral, nutty and green apple. In addition, the whiskey produced by the distillery is of excellent quality and has not only been included in the authoritative professional whiskey book "The World Atlas of Whiskey", but its 1989 single malt whiskey was also selected into the "101 Whiskeys You Must Drink in a Lifetime". One of the 101 must-drink whiskeys.
