Located at 1,073 feet above sea level, Dalwhinnie is currently the tallest distillery in operation in Scotland and represents the essence of Highland single malt Scotch whisky. The distillery utilizes the traditional method of worm cask condensation, which allows the spirit to create more copper dialogue during the distillation process, further enhancing the finesse and resulting in a distinctive richness and complexity.
Dalwhinnie Distillery is situated on the heights of the Grampian Hills, close to the geographical center of Scotland, and Dalwhinnie has been a meeting point for stock drives for centuries, mainly cattle drives from the north, or commercial trips from Kintail, Skye, and the Hebrides to the main markets of Crieff and Falkirk in the south. The main markets were Crieff and Falkirk to the south.
Already in those days there was an illegal whisky distillery in Dalwhinnie supplying liquor to travelers who had to stop from time to time to rest from their long and arduous journeys. Despite the harsh climate and remoteness, the abundance of pure water from Lowan and Dolwyn, 1,057 feet above sea level, the abundance of peat, and the availability of road and rail transportation, led to the construction of the Dalwhinnie Distillery in 1898.
The three founding fathers from the Highlands also complemented each other in the profession of distillation John Grant, a solicitor and assistant sheriff's agent for the county of Inverness-shire, and Alex Mackenzie, the designer of the distillery, who was an architect and town surveyor George Sellar, a grocer and cloth merchant, had chosen their site well, being near the cold, pure waters of Loch Hammond and Dolwyn, which flowed directly from the ground through the brook Allt an t'Sluic, and on one side of the plant was adjacent to the Great North Road, and on the other side to the stream Allt an t'Sluic. They had chosen their site well, close to the cold, pure water of Loch Hammond and Dolwyn, the Allt an t'Sluic, the brook that ran directly under the ground through the distillery, and the Great North Road on one side of the site, and the main railroad to Inverness County to the south on the other. The founders, however, established the company, originally named the Strathspey Distillery, at the end of a wave of construction of many distilleries; and only a few months after production had begun, a severe depression hit the industry hard, and the company suffered the fate of liquidation.
15 year old Dalwhinnie double-matured in ex-bodega Oloroso cask wood for a rich sweetness and spicy complexity to enhance the heathery, honeyed aromas and tastes of the regular
