In 1668, Dom Pierre Pérignon, a Benedictine monk, was appointed procurator at the Abbey of Hautvillers. 
At a time when everything was guided by empirical methods, Dom Pierre Pérignon developed revolutionary techniques for viticulture and winemaking based on precise rules. 
Father Pérignon modernized the abbey, restored its vineyard, and set about to make "the best wine in the world".

The "wine of Father Pérignon" became one of the most sought-after wines in France. It was served at Versailles and enjoyed by none other than Louis XIV.

Profoundly inspired, his vision revolutionized winemaking with standards that remain at the heart of all champagne wines today. 
The legacy of Dom Pierre Pérignon continues to nourish Dom Pérignon's creative vision.


The Abbey of Hautvillers, where it all began.

According to legend, around the year 650, a dove led Saint Nivard, who was walking in the hills, to the spot. After it finally came to rest on a beech tree, Saint Nivard, guided by the bird's mysterious flight in which he recognized God's divine will, decided to found the Abbey of Hautvillers there.
From 1668, Dom Pierre Pérignon brings the abbey to light by imagining a remarkable wine.
The Abbey of Hautvillers is located on one of the most beautiful sites in Champagne: overlooking the valley, it is surrounded by an amphitheater of vineyard-covered hills.

The serene, austere beauty of the Abbey and the spiritual legacy of the place continues to inspire the creative vision of Dom Pérignon today.

All creative processes have their constraints. Dom Pérignon's constraint is the Vintage: Dom Pérignon can only be produced from the harvest of a single year.
Dom Pérignon's ambition is to bear witness to each year, whatever the challenges may be.
Dom Pierre Pérignon dares to put itself on the line, to take risks, to go as far as accepting that it will not declare the vintage.
Dom Pérignon's creative legacy is this reinvention of its work with each vintage.
Dom Pérignon Vintage is the culmination of the elaboration and creative processes. It embodies the vision.
Dom Pérignon Vintage expresses itself fully in its three dimensions:
The year: the character of the seasons
The Plénitudes: evolution by successive windows of expression on the way of the long maturation on lees.
The colour: White or Rosé.
These three dimensions are inseparable, and no combination is quite like any other. Each has its own space and time. As such, Dom Pérignon can only be the sum total of all past Vintages, and those yet to come.

The assemblage is the foundation of the Dom Pérignon style. It is guided by timeless principles that
have always taken precedence over winemaking techniques and their evolution.
Dom Pérignon can only be made from a blend of grape varieties and terroirs: our goal has always
been to create an enhanced whole with ever-more tension, rhythm, completeness and complexity.

Dom Pérignon is striving for an ideal.
The assemblage of Dom Pérignon is a perfect balance of black and white grapes. 
The paradox of opposite and complementary elements of Chardonnay and Pinot Noir create vibration and tension. 

Dom Pérignon is designed to be confronted with time. Both the White and – remarkably – the Rosé
are widely recognized for their impressive maturation potential. 

A triumph of non-oxidation and the mystery of maturation on the lees (of the yeast, which makes it effervescent), the wine goes through slow, subtle metamorphoses. The style of Dom Pérignon is perfected. This slow maturation is the price that has to be paid to make Dom Pérignon stand out as one of the most complex of all wines.

It takes no fewer than eight years in the cellar before Dom Pérignon expresses its first plenitude.



Vincent Chaperon, set off to explore the Champagne region, joining Moët & Chandon in 1999. Inspired by these vineyards in more northern climes, he gradually developed a strong attachment to the region, putting down his own roots in a new terroir. He decided to stay and deepen his knowledge of the vineyards and local winemaking techniques, forging a personal aesthetic of champagne.

In 2005 Vincent Chaperon joined Dom Pérignon. His meeting with Richard Geoffroy proved decisive, the beginning of a thirteen-year apprenticeship during which the two engaged in an ongoing dialogue with one and other, and with nature, nurturing a mutual understanding anchored in confidence.
The passing of the baton took place on January 1, 2019 when Vincent Chaperon became Chef de Cave of Dom Pérignon.

Peaches, fresh crushed strawberries and roses on the nose. Full-bodied and generous. Fine tannins that frame the wine beautifully and set it up for a fresh finish. Some fruit tea and cedar undertones. Enticing finish with hints of bitterness. Savory.

In comparison to the charming, pure 2008 Dom Pérignon Rosé, the 2009 Dom Pérignon Rosé possesses a ripe, dense bouquet with aromas of dark berries, licorice, dried white flowers, toast and pastry, enhanced by delicate, racy smoky hints. Full-bodied, broad and rich, it’s dense and phenolic due to the approximately 15% still red wine sourced from grapes planted in the villages of Hautvilliers, Aÿ and Bouzy, culminating in a protracted, sapid and chalky finish. Although already thoroughly enjoyable, it should age well over the next 10 years. This blend of 56% Pinot Noir and 44% Chardonnay was disgorged in March 2022 with a dosage of five grams per liter.


🏅 Wine Spectator 96 pts

A lovely rosé Champagne that waltzes gracefully across the palate, belying the concentrated range of macerated raspberry and strawberry, candied blood orange peel, toast and saffron notes carried on the elegant, satiny mousse. Long and fresh, with minerally smoke and oyster shell accents on the focused finish. Drink now through 2035.


🏅 Wine Spectator 97 pts

The 2009 Dom Pérignon Rosé marks a return to a richer style of Rosé following the more ethereal 2008 Rosé. Sweet red cherry, blood orange, spice and pomegranate all build in a creamy, sensual DP Rose that hits all the right spots. Over the last few years, Chef de Caves Vincent Chaperon and his team have lowered the still Pinot portion of the Rosé down to about 10% from a high of 28% or so, reached around 2004 and 2005. In 2009, the Rosé gains considerable textural presence from the generosity of the year. It is a superb Champagne. I preferred it to the 2008, which was also part of this tasting.
